ALDI meal planning week of 1/26/20 – 2/1/20

I’m assuming that you have on hand some pantry basics like cooking oil, common condiments, and spices. *** Read through the recipes before you shop, to make sure you have the necessary pantry staples on hand for this week’s ALDI menu plan; see a summary in the printable grocery list below.

Six Easy Dinners from ALDI for $60.00

ALDI Meal Plan — Start cooking 1/26/20

  • Sunday: Roast chipotle chicken + potatoes. (Shred 2 cups of the cooked chicken, and reserve it for Tuesday’s recipe.) On the side, steam up about 3/4 lb of broccoli & top with a bit of shredded cheddar.
  • Monday: Roasted cauliflower, potato, & corn chowder. Serve with the baguette and strawberries.
  • Tuesday: BBQ chicken naan pizza (substitute yellow onion for red), oranges.
  • Wednesday: Sausage & sweet potato sheet pan dinner and oven roasted potatoes (chop up the last of your potatoes, and toss them on a rimmed baking sheet with olive oil, seasoned salt, black pepper, & Italian seasoning to taste — pop in the oven 10 minutes before putting in the sheet pan dinner, for a total of about 40 minutes or until browned nicely, stirring halfway through). Have oranges on the side.
  • Thursday: Slow cooker chipotle chicken chili. Top the chili with cilantro. On the side, garden salad topped with any remaining broccoli (chopped), a few of the mild pepper rings, and a little thinly sliced onion.
  • Friday: Shrimp & mushroom quesadillas, sliced avocado, and cups of leftover chicken chili.
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

ALDI Shopping List — Shop through 1/25/20

Note: You’ll end up with 2 cups of leftover chicken broth this week, which you can freeze for use in later recipes. Any leftover chipotles in adobo keep in a sealed plastic container in the fridge for quite a while, or puree and freeze.

These meals will likely run you even less if you supplement this week’s ALDI purchases with clearance meat you already have in your freezer, pantry staples you picked up on sale, produce you already have on hand, and/or sale produce from your local produce market. A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences. This week’s ALDI meal plan reflects prices from the current week’s ad (running 1/19-1/25 in Sunday ad markets, and 1/22-1/28 in Wednesday ad markets). In either ad market, shop any time through Saturday and start cooking on Sunday 1/26/20.
