Six Easy Dinners from ALDI for $60.00

ALDI meal plan — Start cooking 6/3/18

  • Sunday: Paprika pork chop sandwiches. Serve with corn on the cob and half the watermelon.
  • Monday: Five ingredient grilled cheese & tomato naan. Serve with the remaining watermelon.
  • Tuesday: Easy pork & potato sheet pan dinner. Roast your asparagus on a separate pan for the last ten minutes or so of the pork & potato cooking time (depending on thickness); just drizzle with olive oil, season with sea salt, black pepper, and crushed red pepper to taste, and toss lightly to coat.
  • Wednesday: Turkey taco stuffed potatoes (substitute regular baking potatoes for the sweet potatoes). Top with diced avocado and serve with sliced mango.
  • Thursday: Smoked sausage, zucchini, & spinach pasta. Serve with sourdough toast and salad.
  • Friday: So-Easy red “pistou” salmon. On the side: While salmon is marinating, dice remaining potato(es) small, cut the rest of your broccoli florets large, cut an onion into chunks, and slice remaining zucchini. Toss with olive oil, seasoned salt, Italian seasoning, and black pepper to taste and roast the veggies on a sheet pan at 425 degrees until tender, tossing halfway through (about 30 minutes total). Then just kick up the oven temp slightly to cook the salmon.
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

Things to know about the ALDI meal plans

A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. See: Pantry staples to stock up on and how to modify a meal plan for your family.

** Ad markets and dates

This week’s ALDI meal plan reflects prices from the current week’s ad (running 5/27-6/2 in Sunday ad markets, and 5/30-6/5 in Wednesday ad markets). Non-advertised prices were collected on 5/30/18 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 6/3/18.

My picky eater husband loved the grilled cheese last night! I served it with tomato soup and it almost reminded me of mozzarella sticks with marinara. Who knew naan bread would make such a good sandwich?! Great idea!

The pork chop sandwiches turned out great! Our oven needs to be fixed, but the toaster oven still worked well on broil for the bread. Loved the taste! I got the thinner cuts of meat and we grilled them instead of pan-friend them. It was so good!

Our Aldi removed all the sun dried pesto from the shelves because of a product mislabeling. :( So I'll be trying tonight's meal with the Alla Genovese Pesto instead.
