But now, let’s get back to the ALDI menu plan you’ve all been waiting for…

ALDI meal planning week of 3/17/19 – 3/23/19

I’m assuming that you already have pantry basics like cooking oil, common condiments, and spices. *** Read through the recipes before you shop, to make sure you have the necessary pantry staples on hand for this week’s ALDI menu plan.

Six Easy Dinners from ALDI for $60.00

ALDI meal plan — Start cooking 3/17/19

  • Sunday: Corned beef & cabbage (use about 1.5 lbs potatoes cut into quarters or eighths, since they’re the regular size ones). Also cut half the head of cauliflower into florets, steam it up, and top with a little shredded cheddar cheese. 
  • Monday: Black bean, tomato, & spinach frittata topped with sour cream. Serve with mandarins and tortilla chips (reserve 8 oz of chips for Friday).
  • Tuesday: Roast chipotle chicken & potatoes (substitute red potatoes, chopping them slightly larger). Serve with strawberries and zucchini tots (use regular cheese, add a little Italian seasoning bc you have plain breadcrumbs, and throw them in the oven to cook up while the chicken is resting before carving).
  • Wednesday: Italian wedding soup with turkey meatballs (use the whole 19.2 oz pack of turkey & substitute 4 oz regular spinach for 5 oz baby; shredded Parmesan for grated). Serve with baguette and grapes.
  • Thursday: Sheet pan smoky Parmesan chicken tenders & veggies, along with easy roasted red potatoes (I like to use seasoned salt instead of Kosher salt, and add additional Italian seasoning & smoked paprika to taste) plus mandarins & grapes.
  • Friday: Crunchy tortilla chicken fingers (double recipe & use tenders instead of cut up chicken breast). You can stir a little chopped chipotle and adobo sauce into sour cream to taste to dip these in, and serve with carrot & celery sticks (If you are out of carrots, just celery!), along with cruciferous crumbleNote: You can cook everything at 425 degrees; just reduce the cooking time slightly on the chicken fingers and check them a bit sooner.
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

These meals will likely run you even less if you supplement this week’s ALDI purchases with clearance meat you already have in your freezer, pantry staples you picked up on sale, produce you already have on hand, and/or sale produce from your local produce market. A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. ** Ad markets and dates

This week’s ALDI meal plan reflects prices from the current week’s ad (running 3/10-3/16 in Sunday ad markets, and 3/13-3/19 in Wednesday ad markets). Non-advertised prices were collected on 3/13/19 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 3/17/19.

My family was eating out WAY TOO MUCH! A friend told me about your website, so after we blew through our monthly eating budget in one week, I gave it a shot to help us save money. I don't consider myself a great natural cook, but I can follow a recipe :) Thanks for sharing these grocery lists and recipes. Every meal has been absolutely delicious! I feel like I'm growing my cooking skills as well as saving my family money. We are enjoying cooking together, and eating around the family dinner table every evening.
