Pick up everything on the shopping list below, then start cooking on Sunday. As always: Six complete dinners for four, $70 out the door.

  • I’m assuming that you have on hand some pantry basics like cooking oil, condiments, and spices. Read through the recipes before you shop, to make sure that you have the necessary pantry staples on hand for this week’s ALDI menu plan. *** The printable shopping list includes a separate section of needed basics for the week.

ALDI Meal Plan — start cooking 7/16/23

  • Easy black bean chili (use chicken instead of vegetable broth), topped with chopped green onion and 4 oz shredded cheddar
  • Scoop up with half of the tortilla chips

Tuesday

Wednesday

  • Chicken with chunky mango-tomato salsa
  • Roasted veggies: Cut up one zucchini, one bell pepper, and an onion into bite-size pieces; trim and halve the rest of the radishes. Toss with olive oil, Italian seasoning, garlic powder, sea salt, & black pepper to taste. Roast on a rimmed baking sheet at 425 degrees for 20-25 minutes, stirring halfway through.

A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use up, adapt the recipes in this ALDI meal plan to your family’s preferences. Thank you for doing this as long as you could! It’s been such a blessing having your weekly meal plans. You have talent that I wish I had with the multi-use of items for the week. Plus, they’re delicious! We’ve enjoyed your plans for years :)

What? No more weekly meal plans? I'm so sad to hear that. We use your plans every week. Our son got married July 1 and I had big plans of getting the newlyweds doing your meal plans. I know it must have been a big decision to decide to stop. Good for you for being courageous and doing what needs to be done. I'm an Amazon seller. I know it is time to stop and enjoy retirement, but I just can't seem to pull the plug and stop it. Our kids say, "Mom why do you keep working? Why?" Good question. I need to follow your example and just do it. Anyway, I plan to continue using your old meal plans. It makes a huge difference in saving money, saving time, and having grat tasting meals all the time. We aren't tempted to go to restaurants as we have the weeks work of meals in our fridge. Thank you Rachel for all the wonderful meals you have planned for us.
