ALDI meal planning week of 3/24/19 – 3/30/19

I’m assuming that you already have pantry basics like cooking oil, common condiments, and spices. *** Read through the recipes before you shop, to make sure you have the necessary pantry staples on hand for this week’s ALDI menu plan.

Six Easy Dinners from ALDI for $60.00

ALDI meal plan — Start cooking 3/24/19

  • Sunday: Simple roast chicken & vegetables. On the side, mix some spring mix salad with some chopped kale, and top it with sliced almonds + chopped carrots.
  • Monday: Vegetarian lemon chickpea wraps. On the side, blackberries and spring mix salad — top this with sliced almonds and a little leftover shredded chicken, if you have some left from Sunday. 
  • Tuesday: Easy spice rubbed fish tacos (use thawed cod, & substitute juice of 1/4-1/2 of a lemon for lime). Serve on corn tortillas & top the tacos with shredded mozzarella, the rest of your open pint of grape tomatoes (sliced in half), and chopped avocado. Have pineapple slices and additional lemon wedges (if desired) on the side.
  • Wednesday: Sheet pan lemon garlic chicken with potatoes & carrots, along with Parmesan roasted broccoli. Use shredded Parmesan on that; put the pan of broccoli in the oven at the same time you add the chicken to the sheet pan of potatoes & carrots, and things should come out about the same time.
  • Thursday: Caprese chicken + kale skillet and oven roasted red potatoes, plus spring mix salad topped with sliced almonds and any mozzarella you have left. To make the roasted red potatoes: Dice about 1.5 lbs of potatoes & toss them with some olive oil, sea salt, Italian seasoning, black pepper, and any other seasonings you prefer, then roast on a sheet pan at 425 degrees — start them about 15 minute before you put the chicken/kale skillet in the oven.
  • Friday: Almond Parmesan crusted low carb cod with garlicky spinach (substitute lemon juice for lime), cantaloupe slices.
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

Or, maybe less…! These meals will likely run you even less if you supplement this week’s ALDI purchases with clearance meat you already have in your freezer, pantry staples you picked up on sale, produce you already have on hand, and/or sale produce from your local produce market. Things to know about the ALDI meal plans

A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning. ** Ad markets and dates

This week’s ALDI meal plan reflects prices from the current week’s ad (running 3/17-3/23 in Sunday ad markets, and 3/20-3/26 in Wednesday ad markets). Non-advertised prices were collected on 3/20/19 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 3/24/19.

Just got home from Aldi. We did the whole list minus 1 can of garbanzo beans(I had one in the pantry) and the mushrooms(not a favorite in our house). Our bill was $60.60! We live in the city of Chicago so we have higher taxes, but still amazing! This is not my first time doing the week, but it is the first time I checked the total with only the items on the list so I thought I would share. Also, the young cashier was interested when I asked for the total and told her it was 6 dinners for 4 people, so I left her the website :)

Seems ironic that the new Jewel rewards program is called "Just for U," which is the old Dominick's program.

Albertsons (Jewel's parent company) bought Safeway (Dominick's parent company) quite a while ago. Jewel's about the last of the local banners to make the switch over to Just for U. There's been some discussion over in the deals group on Facebook. https://www.facebook.com/groups/hotholidaydeals/

We loved loved love the lemon chickpea wraps the last time they were in a meal plan. Can't wait for them or the roast chicken. So excited!
