ALDI meal planning week of 10/6/19 - 10/12/19

I’m assuming that you already have pantry basics like cooking oil, common condiments, and spices. *** Read through the recipes before you shop, to make sure you have the necessary pantry staples on hand for this week's ALDI menu plan.

Six Easy Dinners from ALDI for $60.00

ALDI meal plan -- Start cooking 10/6/19

  • Sunday: Bacon-wrapped chicken (use 2 lbs of chicken), with sliced honeycrisp apples and perfect roasted potatoes (add more seasonings of choice -- I like Italian seasoning, smoked paprika, and garlic powder myself). While your chicken and potatoes are roasting, do a little meal prep -- place ¾ lb boneless chicken breast in a saucepan, enough water to cover to about an inch. Gentle boil for 8-12 minutes or until cooked through to temperature, then let cool and shred for tomorrow's chili. Also, cook up any leftover bacon.
  • Monday: White chicken chili (substitute the shredded chicken you cooked up yesterday for the turkey, & top it with cheddar, sour cream, and green onion), spring mix salad on the side topped with chopped orange bell pepper, green onion, and any leftover bacon (cooked and crumbled).
  • Tuesday: Chicken, avocado, & mozzarella chopped salad (serve on a mix of 4 oz spinach + some spring mix salad, instead of on romaine; cut up the fresh mozzarella instead of using the smaller balls), along with cups of leftover chili. Slice up the rest of your apples.
  • Wednesday: Italian sausage, pepper, & potato packets (cut potatoes into smaller pieces, since you're not using baby), along the rest of your spring mix salad, and half the bag of grapes.
  • ThursdaySouthwest salsa turkey burgers served on buns & topped with shredded cheddar + avocado, grapes on the side.
  • Friday: Mushroom, black bean, & spinach veggie burritos served with sour cream, plus the tortilla chips with the rest of the salsa.
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn't to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences -- or just use the ideas here to supplement your own meal planning. ** Ad markets and dates

This week's ALDI meal plan reflects prices from the current week’s ad (running 9/29-10/5 in Sunday ad markets, and 10/2-10/8 in Wednesday ad markets). Non-advertised prices were collected on 10/1/19 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 10/6/19.

  1. What are the tortillas for this week? I skimmed through the recipes and notes, and I was wondering if I had missed something. 😬

    1. They're under "grocery" in between the bread crumbs and the Great Northern beans -- or if you mean what recipe, in the veggie burritos on Friday. 🙂

    2. I’m confused too about the honey crisp apples for the bacon wrapped chicken recipe. They’re mentioned but not included in as part of the perfect potato recipe either. I would’ve just left them off of my grocery pickup if I had caught it. Can you clarify Rachel?

      1. They’re to slice up and eat on the side, not as part of the recipe itself. Sorry if that was unclear!

      2. The bacon wrapped chicken was moist & delicious. I turned out to need 35mins for cooking time instead of 50. I even had left over seasonings, so I put them in a ziplock to use again for this meal another time or for anything else. I wasn’t sure about the apples because it was also such a big bag. And I didn’t see them being used in another recipe for the week. Good substitutes though (if you needed them). Broil those exact same potatoes for less than 10 mins. Just keep your eye on the for the golden brown crisp look! Thanks Rachel for this amazing plan. My Frienf Karen & I are starting today for the first time. Mozzarella balls & romaine lettuce hearts were missing From the shopping list. Enough spring mix for the whole week & Tuesdays salad main course.

      3. I'm glad you enjoyed the chicken! Cooking time might vary if yours was thinner.

        As far as the mozzarella and romaine, see the note right next to that salad main about substituting -- the mozzarella balls are seasonal, so cut up the 8 oz fresh mozzarella instead and serve on spring mix/spinach instead of on romaine.

  3. White Turkey Chili was made like you suggested with boiling & shredding 3/4lb of chicken on Sun. Had to use tomatoes with green chili’s instead because our ALDI didn’t carry just the 4oz cans of green chili’s. No biggie. I used both 10oz cans & yes it was spicy, but I’m sure about the same.
    Loved it! Used a hand potato smasher rather than a food processor. I just didn’t want to drag it out from the bottom of the cabinet.
    I didn’t any salt!

  4. I just found this site and I love it!! One question I have is when do you usually add the weekly meal plans? I am looking forward to using that going forward. With a family of 6 it's hard to plan new menus and this is a great tool to use! Thank you for your time and commitment to this page!
