Well, isn’t this just a fun little flavor explosion of a recipe mashup. Sausage, Peppers, & Onions (plus artichoke!) Naan Pizza drops a classic flavor combo onto a chewy flatbread crust, then punches everything up with tangy artichokes and smooth mozzarella.

Yes, Italian sausage is somewhat more traditional on pizza. Today, though, we’re going to jazz ours up with Polska kielbasa in this Sausage, Peppers, & Onions (plus artichoke!) Naan Pizza recipe. How’s that for a deliciously different 30 minute weeknight dinner idea?

So, how’d this one come about? Well, the other day I was thinking that sausage, peppers, & onions would make for a nice easy dinner. But then, I spotted some leftover artichokes from making this vegetarian pasta skillet the other day… and then, I also remembered a pack of naan in the freezer from a long-ago sale.

Well, how is all of that not an easy pizza dinner in the making, I ask you? This recipe practically wrote itself! Sometimes you get the most delicious serendipity, when you give yourself permission to play around with the odds and ends you have on hand.

Sausage, Peppers, & Onions (plus artichoke!) Naan Pizza

Ingredients

2 Tbsp olive oil, divided
1 red bell pepper, sliced into thin strips
1/2 of a medium yellow onion, sliced
14 oz smoked sausage or Polska kielbasa, sliced into coins
2 tsp minced garlic (about four cloves)
1/2 of a 12 oz jar of marinated artichoke hearts, chopped
8 oz shredded mozzarella
4 pieces of naan

Directions

Preheat oven to 400 degrees. Slice the pepper and onion.

While you’re cutting your onion, heat 1 Tbsp olive oil in a large skillet over medium heat until shimmering. Add the pepper and onion to the pan and saute for five minutes, stirring occasionally.

While the pepper and onion are sauteing, slice the sausage into coins and chop your garlic and artichokes.

Add the sausage and garlic to the skillet along with the pepper and onion and saute for another five minutes, stirring occasionally. Stir in the artichokes and turn off the heat under the pan.

While the sausage is browning, shred the mozzarella (if not using pre-shredded). Place the naan (bubbly side up) on two rimmed baking sheets, and brush each piece lightly with olive oil.

Top the naan with shredded mozzarella, then add the sauteed sausage & veggies.

Bake your naan pizzas at 400 degrees for 10 minutes (switching pans between oven racks halfway through), or until cheese is melted and naan is browned at the edges.

Note: I made my naan pizza without sauce today, because I wanted just to highlight the flavors of the sausage & veggies sans tomato. If desired, you can use pizza sauce (or a doctored up can of tomato sauce) rather than simply brushing the naan with olive oil.

Simple and easy dinner! Even my fussy twins ate it all. We used a doctored up tomato sauce with the kids and their helping hands made preping easy anf fun. Will definitely make this again, experimenting with the naan pizzas and individual tastes!
