Midweek Meal Planning 2/18/15

Welcome back to Midweek Meal Planning for the week of 2/18/15! Yes, it’s more traditional to meal plan on the weekend, but since our grocery ads here in Chicago flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays — looking both forwards and back.

  • Sunday: Leftover chili over baked potatoes, broccoli.
  • Monday: Junior High Guy ate at a friend’s, MashupDad had a dinner meeting, and Mr. 8 and I polished off the rest of the never-ending chili.
  • Tuesday: Not Really Jambalaya — I just sauteed up some turkey dinner sausage, onion, baby sweet peppers ($.99 at Caputo’s on Monday), mushrooms, and garlic. Mixed that together with cooked brown rice and a can of petite diced tomatoes (Red Gold has been on sale everywhere for the last two weeks), and threw in a little sea salt, lots of black pepper, Cajun seasoning, and cayenne. (Low Carb MashupDad had a Low Carb Cauliflower Roll sandwich, instead. He added some shredded Parmesan to the cauliflower mix this time and said it held together a little better.)
  • Wednesday: I am trying out something with chicken, hummus, and Sriracha — If it turns out well, I’ll post the recipe for you on Sunday! (If I get ambitious, I’m also going to try this Crispy Cheese Cauliflower recipe Tammy shared last week, but then will have to make separate dairy free cauliflower for Junior High Guy.)
  • Thursday: Possibly… The Jewel brats from my freezer I never made last week, with roasted asparagus and fingerling potatoes.
  • Friday: Salad Bar Friday — I plan to pick up the cheap salad and Perdue Short Cuts at Jewel in the morning, and have some Caputo’s fresh spinach and more at home to supplement that.
  • Saturday: I’m going to look at the cheap pork shoulder roast at Jewel — If it looks good then I’ll cook up some Slow Cooker Pork Carnitas so that we have some nice leftovers.

Sunday our neighbor had us over for a turkey dinner (gave me all the bones and leftovers!) Monday chili Tues Turkey casserole with stuffing, green beans, turkey and motz cheeze on top, side of mashed potatoes, salad Wednesday: leftover casserole and chili Thursday: pasta? we have a basketball game and drivers ed at dinner time which makes these dinners so FUN to make! Friday: sausage and spinach bread- Rhodes dough thawed, rolled out with thawed spinach and cooked sausage and motz cheese, garlic powder and Romano cheese. Cinched around to form large logs and baked for 30 min. Serve with pizza sauce salad and fresh fruit. I have loved the fresh fruit this week. So yummy to have blueberries and strawberries in the dead of winter. Saturday: more basketball... maybe pasta or pulled pork. Something easy.

Bad planning week for me with a long weekend and work overload :-( more reason to plan ahead but... I didn't. Monday: Ordered Chinese takeout Tuesday: Leftover pork and cream of chicken with Italian season packet (Hidden Valley Range on sale a while back at Target) with rice and mashed and corn. Today: Find what we can in the fridge (I like that one from hollis, but I have a head of cauliflower and some avocados I have to use tonight I will search for something easy and quick. Thursday and rest of the week I have no clue yet. HELP!

Get a big pork roast from Jewel and throw it in the crockpot with a bottle of BBQ sauce and a sliced onion for easy BBQ shredded pork? Or do Jaci's chicken alfredo w/ the Perdue Short Cuts idea for another quick dinner?

While doing the whole snack + homework thing this afternoon, got my cauliflower chopped up and the Chex smashed up for the chicken, which is not thawing on my schedule, grr. I'm rethinking salad night Friday because it's so darn cold, so if I brave the cold and do Jewel tomorrow instead, it might be the pork carnitas in the crockpot instead. Flexibility! :)

The roasts at jewel are big! I had the butcher cut mine in half awesome deal. Tomorrow crock pot pulled pork tonight chicken alfredo with the perdue shortcuts.

Let's see Sunday -niece's birthday so we had pizza Monday-leftovers aka find whatever you want in the fridge and eat it Tuesday-Ham, creamy noodles and applesauce Wednesday-hamburgers, chips and carrots with dip Thursday-we're going to a basketball game so we'll grab dinner out Friday-Tacos Saturday-pork roast,garlic mashed potatoes, green beans
