Midweek meal planning 2/11/15 -- What's for dinner?

Welcome back to Midweek Meal Planning for the week of 2/11/15! Yes, it’s more traditional to meal plan on the weekend -- but since our grocery ads here in Chicago flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays.
Our week here has been all higgledy-piggledy due to the artist formerly known as Mr. 7. We had pizza at now-Mr.-8's birthday party on Saturday (I forgot about this when making last week's plan, so we actually had my Caputo's salmon + spinach on Friday). Then, we ate out at Fuddrucker's on Sunday (birthday boy's choice!). Not exactly frugal, but hey: You only turn 8 once, right? 🙂
- Sunday: Fuddrucker's.
- Monday: Leftover birthday pizza, carrots, fruit.
- Tuesday: Lemon Garlic Roasted Chicken, potatoes, and salad. (I actually made this on Sunday, but saved it for later.)
- Wednesday: Leftover chicken, leftover potatoes, broccoli.
- Thursday: I'm looking at this weather forecast and thinking a big warm pot of chili! (Canned tomatoes were on sale last week at Jewel and are on sale this week at Ultra, and we have ground beef in the freezer.)
- Friday: Leftover chili.
- Saturday: I'm tentatively thinking omelet -- we have these lovely eggs, and Caputo's has Treasure Cave cheese + spinach on sale. Either that or brats + fancy hot dogs from that long ago Jewel sale, since I need to get them out of my freezer.

I made the zucchini dish you posted last night jewel has zucchini on red alert for .99. Lb and I bought the Stella shaved parm cheese 2/$6..loved it
Could you please post the recipe for zucchini and cheese? I can't find it here, looking under both recipes and the Feb. 10 date you posted it was found, ( though I sometimes miss the obvious ) Anything with cheese and veggies sounds worth a try 🙂 Thanks.
It was yesterday..don't know how to repost but so simple..I actually cooked it at a lower temp because I was also baking chicken..I cooked it at 425 for 10 minutes and the last 5 min I added the cheese and threw it in the broiler..be genourous with the cheese...so tasty..maybe Rachael can repost

I made something similar to this but added breadcrumbs and parmesan together and then rolled the zucchini around in it and baked and all 4 boys Mr. 8 through Mr. 14 loved! And mom! Not DH but he avoids anything green. Even if the green is hidden by parmesan! 🙂

Monday: pancakes and eggs
Tues: meatloaf with cheap ground beef from Jewel a few weeks back, veggies (nothing leftover)
Wed: clearance chicken thighs from Jewel Greek style, green beans, roasted potatoes
Thurs: homemade pizza, salad
Fri: pasta with cheap pasta from a Butera opening and cheap tomatoes from their opening, garlic naan
Saturday: pulled pork in crock pot
LOL -- you notice his BIG smile is for Fuddrucker's -- not something I actually cooked!
Our week has not gone according to plan but everyone got fed 🙂
Sunday-leftover Olive Garden
Monday-hot dogs Mac n cheese and fruit
Tuesday -hubby out of town so the boys and I went out with a groupon I bought awhile back
Wednesday-Chicken and Cheese Quesadillas (Pioneer Woman again-she's my go to lately)
Thursday-pulled pork sandwiches(in the freezer from my mother in law)
Friday-we usually have pizza but my nieces bday is Sunday and we're having pizza so not sure
Saturday-pork roast garlic mashed potatoes and green beans (pork roast bought awhile back)
Do you like those fancy Dietz and Watson hot dogs from Jewel? I still have a bunch too, but they cook up real weird, very bumpy and twisted and usually split.
I liked the chicken sausage though. Brats- so, so. I still have a lot of those too.
Yesterday I made teriyaki pork strips with white rice and garlic and thyme carrots on a side.
The day before chili.
Sunday had a fancy party during the day so had a big meal there and only frozen pizza later in the evening for whoever was a bit hungry.
Friday- baked teriyaki glazed salmon, with rice and veggies
Other days- I don't remember. 🙂
I like the chicken ones, wasn't a huge fan of the brats but dh and the kids like them fine. I don't eat hot dogs, but they also liked those quite a lot, lol.
We had the fancy deli style hot dogs - the ones that are in the pack all randomly and still linked together. I think they tasted okay but I agree on how they split and were all bumpy. I thought it was just what we did with them, but maybe not. We have a pack of the normal deli franks in the square pack in the freezer but we haven't tried them yet.
Sunday - A new chili recipe that I didn't really like because it tasted more like spaghetti sauce
Monday - A corn chowder that I tried (new recipe) - I used turkey ham in it - I didn't like that recipe either because of the
thyme taste - week is going great
Tuesday - Grilled cheese and tomato soup - had to come back from an appointment - not willing to eat up the leftover chili just yet and couldn't face another letdown with bad recipes
Wednesday - A meat loaf that used 3 pieces of string cheese in the middle, acorn squash, salad, and (don't tell anyone) boxed au gratin potatoes. Meal success.
Thursday - Will have waffles made in the waffle maker I bought at Aldi's a while back, turkey bacon, some eggs, and half a grapefruit per serving
Friday - Homemade Ree Drummond pizza - will use her dough recipe, although I will substitute just one cup of white whole wheat flour to it - I don't want the dough to be too heavy with using all white whole wheat -
Saturday - Sloppy Goblins - a kind of sloppy joe recipe that uses hamburger, plus two cut up hot dogs, some dill pickle relish and something else I can't remember
Sunday - Hot dogs and tomato soup (I have a bunch of that).
Oh no! Can you jazz up the leftover chili with more seasonings, jalapeno, etc?
Was able to fix up the "spaghetti sauce" chili in each individual serving (like adding raw onion, sour cream, cheese), so all is well!!!
LOL good! Nothing worse than bad chili 🙂
Sunday: Doctored up Jack's pizza and quesadillas
Monday: Cornflake chicken, homemade mac n cheese, frozen green beans from garden
Tuesday: Marinated Flank Steak (in freezer, from a sale), parmesan cauliflower, salad.
I LOVE this recipe for the cauliflower, it almost tastes like deep fried! I don't even bother w/lemon.

Wednesday: Leftovers
Thursday: I think I'm making stroganoff meatballs & noodles, salad, maybe use up the rest of the cauliflower.
Friday: Something easy, burgers, pizza, soup from freezer.
Saturday: Probably sirloin steak from freezer I got at Sam's, reduced $. And ??
Sunday: Our daughters are coming over for Turkey dinner. Got small turkey cheap at Thanksgiving. We didn't have a Thanksgiving dinner this year, since we were in Detroit (with daughters) watching the Bears lose!! We ate at a bar that night. 🙂
