Midweek meal planning 2/4/15 -- What's for dinner?

Welcome back to Midweek Meal Planning for the week of 2/4/15! I know it’s more traditional to meal plan on the weekend, but since our grocery ads here in Chicago flip midweek, and since Wednesday hump day is when many of us start running out of steam, I’m going to buck the trend and go with Wednesdays.

Here’s how my week of meal planning is going

  • Sunday: Butterflied Roast Turkey. The Super Bowl is KIND of like Thanksgiving, right? And I scored clearance turkey for $5.67 at Target last week; hope you got yours. I made stock with the bones overnight in the Crock Pot, which leads me into...
  • Monday: Kicked Up Turkey Sausage Slow Cooker Soup. Butterball sausage was $1.25 at Jewel last week after printable coupon, a bunch of spinach was $.99 at Caputo's, and I have been using up this bag of Lundberg wild + mahogany rice -- which gives the soup the prettiest color, both redder and darker than in the original photo above. (Use cayenne instead of crushed red pepper for extra kick, too.)
  • Tuesday: Leftover smorgasbord. Junior High Guy had salsa chicken from late last week, Mr. 7 had leftover Chef Boy Ardee from Monday Snow Day lunch, MashupDad had turkey, and I had soup, along with free Jewel salad + fruit.
  • Wednesday: We're having leftover turkey, and I'm also making potatoes and broccoli. Or maybe green beans.
  • Thursday: Leftover turkey soup.
  • Friday: MashupDad is out for the evening, so the kids and I will have breakfast for dinner -- eggs and Brown Rice Flour Pancakes.
  • Saturday: I'm going to pick up the sale sockeye salmon from Caputo's and make MashupDad grill, but he doesn't know that yet, so shhh...

I'm not cooking much out of this week's ads, since turkey + soup gives us a lot of leftovers. But, how's your week of meal planning going? Let's inspire each other!

    Sunday: Super Bowl appetizers
    Monday: Left over appetizers, Mexican enchilada soup (from a package, made with leftover 3 ing chicken meat)
    Tues: Chili (ground beef from Jewel sale) I browned 6 lbs of meat last week for quick dinners. I went out for sushi with girlfriends.
    Wednesday: Breakfast for dinner most of the kids out for basketball games.
    Thursday: Dithering between Italian beef in crockpot or pot roast with cheaper roast from Jewel sale.
    Friday: Leftover beef
    Saturday: Chicken tacos/burrito bowls from frozen leftover 3 ing. chicken meat.

  2. Monday: Hot turkey (made over the weekend and it was a huge bird from Thanksgiving deal), garlic mashed red potatoes, canned corn (when on sale around thanksgiving at Target), gravy.
    Tuesday: Had prepared/froze honey teriyaki Zycon chicken in freezer bag several months back, made in crock pot and came home from work and cooked rice and veggies and stir fried in some teriyaki and soy sauce for deliciousness.
    Wednesday (hubby working from home and going to make something spectacular 😉 I don't know what yet.
    Thursday: Thinking I will try the frozen pot pie I made a few weeks back, I kind of slacked the rest of the week 🙁
    Friday (not sure yet!)

  3. I am not good about meal planning. I base my meals on what produce I get that week. This week, broccoli leads to broccoli quiche, cauliflower mushrooms peppers and onions lead to roasted vegetables, tomatoes and avocado get mixed with a can of corn and black beans for a salad that's a meal, and sweet potatoes lead to a lentil chickpea crock pot stew that I have never made before.

    1. I often base meal planning on produce (or in our case meat, too) that we find on sale during the week, that's why I moved these to the middle of the week! 🙂 I actually amended tonight's plan to add chili-garlic roasted cauliflower because I found a head in the fridge that needed to go.

  4. Dinners are crazy at our house right now between kids in volleyball, piano lessons and girl scouts but I refuse to eat out all week, plus we live in the middle of nowhere which makes it hard to eat out.
    Sunday: Italian crispy chicken breasts, mashed potatoes and corn (sweet corn that we picked ourselves over the summer and then took off the cob and froze)
    Monday: Chili and cornbread
    Tuesday: Grilled chicken breast, oven baked fries, steamed broccoli
    Wednesday: Homemade chicken noodle soup, homemade break and brownies ( had a family member over so felt like we should have dessert)
    Thursday: Mom's night off! Family in from out of town so going out for dinner!
    Friday: Homemade pizza, homemade bread stick and salad.
    Saturday: Leftover buffet. We lay all the leftovers out on the counter and everyone picks what they want.
    Sunday: Ribs in the crock pot, baked potatoes and green beans

  5. Kind of slacking this week but we're muddling through
    Sunday: Buffalo wild wings for the Super Bowl
    Monday: various leftovers
    Tuesday: sloppy joes chips and fruit
    Wednesday: Spaghetti and meatballs with salad
    Thursday: middle son home sick so I made scrambled eggs with sausage toast and blueberries because that's what the sickie felt like
    Friday: pizza
    Saturday: Not sure yet. Got fresh green beans at Meijer for .99/lb so maybe pork roast that I have in the freezer from some past sale

  6. Sunday: Super Bowl Food
    Monday: Burgers, pan fried potatoes, broccoli.
    Tuesday: Mustard Maple chicken thighs, mashed cauliflower that had to go, zucchini pancakes from frozen shredded zucchini from garden, salad
    Wednesday: For my MIL bday, Chicken Lombardy, creamy orzo pasta w/spinach and diced red & yellow pepper, fresh asparagus, salad, rolls, cupcakes. (Iknow, chix 2 days in row, but my MIL likes this and it was last minute)
    Thursday: Homemade tomato soup in freezer from garden, grilled ham and cheese.
    Friday: Leftovers from Wed
    Saturday: My folks are taking us out! Yay!
