Midweek Meal Planning 12/3/15

Welcome back to Midweek Meal Planning for the week of 12/3/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here.

Winner, Winner, Chicken Dinner — I really should have sprayed the sides of this dish and not just the bottom though, oops!

Midweek meal planning

  • Sunday: Leftover Roasted Garlic Turkey Noodle Soup and other odds and ends.
  • Monday: Slow Cooker Cheesy Chicken Enchilada Chili — except with leftover turkey instead of chicken.
  • Tuesday: Leftover chili.
  • Wednesday: Make your own pizza night with some $1.00 pizza dough and $.75 (clearance) refrigerated pizza sauce from ALDI, mozzarella I had in the freezer, pepperoni from Dollar Tree, spinach, mushrooms, olives…
  • Thursday: I used the marinade from this Festive Greek Chicken Salad but cooked up the chicken in the oven this time with some mushrooms and onion. (Not bad, but better browned in the skillet.) Baked potatoes, salad.
  • Friday: It may be Hormel Party Tray From Target if I don’t get in gear here, lol. Junior High Guy is advocating for taking some leftover lasagna roll-ups out of the freezer, though, so probably those, garlic toast, the rest of the salad.
  • Saturday: People are going all different places, so something grab and go — sandwiches, soup, you know, that not-really-a-dinner type of dinner.

Things have been super crazy the past few weeks but I really enjoy this post each week. I just wanted to say I have nothing to contribute but that I love reading everyone's recipes and ideas :-)

Sunday: I don't remember Monday: Pulled pork from Rachel's recipes Tues: Baked potatoes with chili (from the freezer), salad Wed: Beef and veggie soup Thurs: Baked pork chops and stuffing casserole Friday: I am thinking bacon, sausage and eggs since no one ate the breakfast sausage I took out. I also scored .25 dinner rolls at Aldi this week along with .25 cranberries. I made an awesome cranberry salad with whipping cream, cranberries, crushed pineapple, apple and mini marshmallows on Tuesday and have some ingredients leftover to make a small batch. Sat: Lot of running like Rachel so maybe Italian chicken sandwiches with meat in the freezer.

I made a version of this Corn and Potato Chowder (cooked on the stove, instead of crock pot, and used chopped onion instead of onion powder, and skipped the garlic powder)---so comforting and good! http://damndelicious.net/2014/09/12/slow-cooker-potato-corn-chowder/ I also made a fresh salad with arugula, fresh parsley, beet slices, red onion, celery, sunflower seeds, walnuts, pomegranate seeds, and blue cheese dressing. So good! Today is pot roast (from Jewel), with the usual carrots, onion, celery, potatoes, and diced canned tomatoes. I had most of the ingredients for the recipes on hand, from various sales at stores like Jewel, Target, and Aldi.
