Midweek Meal Planning 1/21/16

Welcome back to Midweek Meal Planning for the week of 1/21/16! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here. In Midweek Meal Planning, we plan dinners for the rest of the week while also looking back to see how we’ve done so far.

It’s been a weird week for us with the long weekend, people getting sick, etc., so not much especially creative here. Will get back on the cooking wagon next week! 🙂

Midweek meal planning

  • Sunday: Both kids were at a friend’s for dinner, MashupDad was ill and not eating, and I had Tofu Tikka Tacos.
  • Monday: Sweet Tomatoes (used a coupon, at least!).
  • Tuesday: When I picked up ribs for these Crockpot Pepsi Ribs at Jewel they were buy one, get one free, so I cooked up the other slab in the oven. (They turned out well, so I’m going to tweak the recipe a little if ribs ever go on sale again and it will appear here someday, lol.)
  • Wednesday: Costco rotisserie chicken, broccoli, fruit.
  • Thursday: Ham in the Crock Pot, with a clearance ham from ALDI.
  • Friday: Leftover ham.
  • Saturday: Grilled sockeye salmon from the freezer.

Sun: ? Mon: Eggs (Jewel), sausage (from Jewel sale long ago), potatoes Tues: Home made mac and cheese- cheap cheese from Kraft at Meijer, cheap pasta from some sale and leftover ham in freezer Wed: Big Bowl (used a GC) Thurs: Buffalo Chicken over mashed potatoes-chicken from previously made batch and mashed potatoes from a Costco purchase last week and homemade chicken soup with leftover Costco rotisserie chicken in freezer and veggies that needed to be cooked. Fri: Thinking homemade pizza or calzones bc I have lots of cheese and ricotta in frig Sat: having neighbors over for Rachel's crock pot pulled pork. Making a burrito buffet with fixings, Jewel guac and everyone contributing sides, dessert

Monday: I used my Instant Pot to cook up some of the $1.88/lb chicken breasts from Jewel, along with sweet potatoes.

Tuesday: Used the leftover chicken from Monday in a stir fry, served over rice.

Wednesday: Tacos (I used some BOGO ground turkey that I got at.....Jewel maybe?)

Thursday: Tortellini with marinara

Friday: I'm thinking home made pizza

Saturday: We'll probably go out.
