Ribs + Pepsi at Jewel for your Big Game Day spread!

In case you were wondering, Crock-Pot Pepsi® Ribs do indeed taste just about as good as they look. 🙂 I’ve never cooked ribs in the Crock-Pot before, but this yummy (and super easy) slow cooker recipe was provided to me by Pepsi — and I think it came out great! Here’s the entire recipe so you can try it out for your own Big Game 2016 home parties or family gatherings; I didn’t change a thing.

Crock-Pot Pepsi® Ribs

Ingredients

3 pounds pork loin back ribs
1/2 tsp salt
1/4 tsp pepper
1/2 cup Pepsi®
1 cup barbecue sauce
1/2 tsp dried thyme leaves

Directions

1. Spray slow cooker with non-stick cooking spray. Cut ribs into 2 or 3 rib portions and place in slow cooker. Sprinkle ribs with salt and pepper and pour Pepsi® over.
2. Cover and cook on low for 6-8 hours (until ribs are tender, at least 170ºF)
3. Drain and discard liquid from slow cooker. Add barbecue sauce and thyme into crockpot on top of drained ribs and mix so the ribs are coated.
4. Cover and cook on low for 30 minutes to 1 hour until ribs are glazed. Serve immediately.

That last bit of time in the slow cooker caramelizes the barbecue sauce nicely to create your glaze on the ribs — and you’ll see why you want to use that non-stick spray at the beginning. Have plenty of napkins on your buffet, too!

These Crock-Pot Pepsi® Ribs would be a nice addition to your Big Game Day spread, and talk about easy to make. These tender ribs barely even needed cutting since they pulled apart so easily at the end, and all the boys in this house quite enjoyed this recipe. I picked up both ribs and Pepsi at my local Jewel-Osco, where you should also keep an eye out for a Pepsi sweepstakes where you can enter for your chance to win either the grand prize of $50,000, or one of 50 gift cards each week.

At Jewel last week I also picked up some Tostitos Scoops and Jewel’s homemade guacamole to help round out the table. Nothing goes as well with football as finger food, right? If you want to vary things up, Tostitos Scoops work great if you want to make easy-to-eat little nachos for a game day buffet, too. You’ll find the store brand guacamole in the produce section, where you can also add in some fresh produce for scooping. (And since our recipe here only calls for 1/2 cup of Pepsi, you should have plenty left for guests…)
