So I started thinking of heavy-on-the-coconut recipes to test this out with, finally settling on: Gluten Free Dairy Free Whole Egg Coconut Macaroons. This easy-peasy recipe is perfect for Passover or for any time of year, and is also a great simple gluten and dairy free dessert to whip up -- with no need for special flours or lots of steps.
