Giveaway — Tropical Traditions Organic Shredded Coconut (5/7)
This giveaway is sponsored by Tropical Traditions. Tropical Traditions provided me with a free sample of this product to review, and I was under no obligation to review it if I so chose. Nor was I under any obligation to write a positive review or sponsor a product giveaway in return for the free product.
Here's another great new giveaway sponsored by Tropical Traditions! You might remember previous giveaways and recipes here featuring Tropical Traditions Gold Label Virgin Coconut Oil and Tropical Traditions Organic Coconut Flour.
Well, here's your chance to win another great organic coconut product from Tropical Traditions:
Think of all the great recipes you could make with this, such as...
Tropical Traditions sent over a whole gallon of unsweetened shredded organic coconut -- really! Coconut lovers rejoice, since you can order your favorite in bulk over at Tropical Traditions; plus, shredded coconut is even on sale as I type right now.
So I started thinking of heavy-on-the-coconut recipes to test this out with, finally settling on: Gluten Free Dairy Free Whole Egg Coconut Macaroons. This easy-peasy recipe is perfect for Passover or for any time of year, and is also a great simple gluten and dairy free dessert to whip up -- with no need for special flours or lots of steps.
See the whole coconut macaroons recipe over at Sunday Scratchups. These were a definite hit with Dairy Free Junior High Guy, and the irresistible temptation of homemade macaroons even caused low carb MashupDad to cheat on his diet a little (shh...).
Since I used both products in this recipe — Want to know more about Virgin Coconut Oil, too?
