Comforting Kielbasa Potato Soup (Gluten Free!)

This easy Kielbasa Potato Soup recipe is comfort food in a bowl -- and naturally gluten free! A cheesy sausage & potato soup that is reminiscent of a sausage & pierogies dinner, but... soupish. 

Raise your hand if you like pierogies! If you like pierogies the same way I like pierogies, do I have a soup recipe for you: The taste of today's Comforting Kielbasa Potato Soup reminds me so much of a sausage & pierogies dinner, I can't even tell you. Potato soup is already the perfect fall comfort food, but adding in kielbasa (or smoked sausage) just takes things up another notch.

I also threw a bag of fresh spinach into this batch of soup to add more color and a few vitamins, but kale would be very nice texture-wise -- if I hadn't already used mine up in making homemade kale chips. This hearty soup uses no flour for thickening, making it completely gluten free.

Comforting Kielbasa Potato Soup

Ingredients

1 tablespoon olive oil
1 medium yellow onion, chopped
2 medium carrots, peeled and chopped
1 tablespoon minced garlic (about six cloves)
13-14 oz smoked sausage or Polska kielbasa, cut into quarters lengthwise, then chopped
2 lbs potatoes, cubed
4 cups chicken broth
1 teaspoon parsley
½ teaspoon seasoned salt
Black pepper, to taste
½ cup sour cream
1 cup cheddar or cheddar-jack cheese
8 oz spinach

Directions

Heat olive oil in a soup pot or Dutch oven for one minute over medium heat, then add in the onion and carrots. Saute for four minutes, stirring occasionally, then add garlic and sausage and saute for another three minutes.

Stir in potatoes, broth, seasoned salt, pepper, and parsley and bring to a boil. Reduce heat to medium-low, cover, and simmer for 20 minutes or until potatoes are tender.

Reduce heat to low. Stir in sour cream, then stir in the cheese. Continue to stir over low heat until cheese is melted and incorporated into the soup. Wilt in spinach by the handful until the whole bag is incorporated into the soup, then serve.

Note: I used a couple of rainbow carrots from my Imperfect Produce box in today's soup, but any carrots will do. I also used a mix of red and small russet potatoes, because that's what I had on hand, but don't get hung up on that precise mixture. If you must, you can lighten this soup up a little by substituting turkey kielbasa and reduced fat cheese.

Maybe it's just me with the pierogies thing, though, so let me know once you try this comforting kielbasa potato soup for yourself. Middle School Guy put away his whole bowl in record time and went for seconds, even though he's not normally a huge spinach fan -- so, we'll call this one a win! So much flavor in this hearty & filling potato soup recipe; it's a dinner unto itself.

  1. Simple, quick to make, tasty and full of vegetables. Very tasty. I used turkey polish sausage and added in a little thyme and some red pepper flakes. We enjoyed and made a great leftover lunch the next day.

  4. Making this recipe right now for dinner!!! I’m also leaving out the spinach. I am trying this recipe in my Instapot and will add the sour cream and cheese once it’s done in the Instapot. Hopefully I’ll remember to come back and let you know how it turned out. ?

    1. Proud to report that it turned out wonderfully in the Instapot!! Sautéed the onion and carrot on the sauté setting for the time mentioned in the recipe. Then added in the kielbasa and garlic and sautéed as well. Turned the Instapot off and added the rest of the ingredients minus the sour cream and cheese. Put on the lid and selected he Soup/Broth setting and let it cook for 30 minutes. Once it was done I did a quick release. Then added the sour cream and cheese. ? It was a huge hit even with my 4 and 2 year old!!

      1. I am so glad that you mentioned the Instant Pot! I did it last night too, and accidentally used the meat/stew button (35 minutes) and it was still great.

        Also, I love spinach but my husband can't eat it because he is on a blood thinner and it messes up the blood chemistry. SO...I put the spinach in the bottom of my bowl, and ladled it in hot, and it still wilted it well. Great soup!

      2. I do that with chicken soup sometimes -- I like to punch mine up with spinach but the kids are a fan of plain chicken soup, and it wilts so fast into hot soup that it's just as easy to do it in the bowl. Glad you enjoyed!

      3. OOH! Thanks for telling how you did it in your instant pot- I was wondering about doing it in the pressure cooker! Def making this next week!

      4. I did this in the instant pot too as described. However, I only cooked it for 8 minutes and it was perfect. When I added the spinach at the end, it wilted into big clumps. I think I would use less spinach or just give it a rough chop first to hopefully prevent the big globs of spinach.

  6. Husband made this tonight instead of waiting til Friday. We weren't sure the salad would have made it that far, so it was dinner tonight. Very yummy, very tasty. He printed the recipe out for the personal recipe book, and also saved it to his computer.

    1. I haven't ever tried, so can't vouch for the results. But if I were to try to do so, I'd still saute the veggies and sausage briefly to release some of that flavor, then add those and everything else up to, but not including, the sour cream ad cook on low for 6-7 hours, then stir in sour cream, cheese, and spinach at the end.

  10. Holy crap is this good! I added extra onion and carrot because I love them. When I give my kids turkey sausage I tell them it's hot dogs, and they REALLY loved their Hot Dog Soup tonight. 😂

  11. My husband prefers non-creamy soups, so I made a batch without the sour cream and cheese. Both batches turned out really good! We'll definitely make this again.

  12. I love making this soup! It's a quick and easy one to throw together when I've forgotten to take meat out of the freezer. Since I always have sausage on hand this is perfect. And you'd never know it was a quick soup. It's very rich and warming on a cold day. One time I didn't have carrots, so I used sweet potatoes and it was just as good.
