Best Ever Grilled Cheese with Roasted Garlic, Onions, & Avocado

Today in Frugal Homemade: Using up your leftovers, by way of a delicious demonstration in the form of Best Ever Grilled Cheese with Roasted Garlic, Onions, & Avocado. You may have noticed that in the meal planning posts and elsewhere I talk a lot about eating leftovers — but that doesn’t always have to be in their original form.

I do always try to use our leftovers in one way or another, though, because it’s pretty much just like throwing money away if you don’t.

Recently I was talking to a friend who told me her family won’t eat leftovers. Won’t. Not in a house, not in a box, not with a mouse, not with a fox… not in any way, shape, or form. This, I just don’t understand — especially when leftovers, repurposed differently, can sometimes turn out even better than the original. To wit:

Best Ever Grilled Cheese with Roasted Garlic, Onions, & Avocado

This morning I picked up $.49 avocados at ALDI, then came home and was scrounging around my fridge for lunch. I found some roasted garlic & onions left over from making some slow cooker garlic chicken thighs a few days ago, and since it’s flat out criminal to waste a good batch of roasted garlic & onions…

Ingredients

2 slices sourdough bread
Butter
Shredded cheddar-Jack
Sliced sharp white cheddar
Leftover roasted garlic & onions
1/2 a ripe avocado, sliced

Directions

Butter both slices of bread. Place one slice butter side down in cast iron grill pan, then top with sliced sharp white cheddar. Add leftover roasted garlic & onions, then top with some shredded cheddar-Jack. Top with second slice of bread, butter side up. Cook the first side over medium heat until browned, then flip and cook the other side until browned. Remove sandwich from pan and add avocado slices. Enjoy!

😉 But I don’t even have my leftovers anymore, because… I ate it all. Best. Grilled. Cheese. Sandwich. Ever! Seriously, though, if you want to make my sandwich here, but don’t happen to have leftovers handy, you can always saute or roast up some onions & garlic cloves, too.

Servings 1

Ingredients

  • 2 slices sourdough bread
  • Butter
  • Shredded cheddar-Jack

No one has ever complained about leftover at our house. Fondly nick named FIFO at our home. Lately, everyone is on such different schedules, most meals are reheated! I find either I am also finding that I am freezing leftovers or we don't have anything ready to eat. Our family dynamics has changed, and I am not sure how to cook anymore.

I would however love to have this grilled cheese avocado any day - yum! I can't seem to get enough avocados:)

Rachel, I would love a post on what people do with their leftovers. Clever ideas for leftover meatloaf, chicken, pasta, etc. Even leftover eggs can be used again. It would certainly help me and maybe those who shy away from leftovers for dinner. I can't even imagine not eating the leftovers. What a waste of money and my time I put in to making the food.

Our family eats leftovers. I have a friend who says her family does not eat leftovers. If there is any food left over after their dinner, it gets frozen for a dinner at a later date. It depends of your idea of what leftover is.

Ooh, love the leftovers in our house! All the random leftover veggies might become a hash with eggs for my breakfast (or dinner!) We are big on quesadillas here's...same versatility as your grilled cheese but easier imo. when we were dating, my hubby didn't do leftovers. But once we bought a house, had kids, and relied on one income, he made an about-face. Saving money is one reason, the other is my sanity. By Thursday, I'm tired of cooking and cleaning up after 3 fresh, new meals plus the snacks after school. I cook MTW, then Thurs we have leftovers!
