December, eh? Well, I’m not entirely sure how that happened, but let’s make the most of it… through cooking! Family meals always help get us through.

As always, use this menu plan as a starting point, modifying as necessary according to what is in stock in your area, what you have on hand in your pantry, and your own family’s dietary needs and preferences.

Six easy dinners from ALDI for $60

20 minute ground beef and broccoli stir fry

ALDI Meal Plan — start cooking 12/6/20

Sunday

  • Sticky balsamic chicken drumsticks (use 3 lbs)
  • Simple sheet pan green beans (cook these at 400 instead of 425 in the same oven with the drumsticks, for their last 25 minutes or so)
  • Slice up some of the apples
  • Warm up all but one cup of the bag of frozen peas (reserve that cup, still frozen, for Friday’s recipe) in a small saucepan with a little butter, minced garlic, salt, and pepper to taste, until heated

Monday

Tuesday

  • Simple vegetarian white bean soup (use 3 oz spinach), topped with shredded Parmesan
  • Toast up & butter the English muffins
  • Serve with salad, topped with Parmesan and chopped tomatoes
  • & cut up some celery sticks

Wednesday

Thursday

Friday

  • Chicken fried rice — instead of leftover chicken, just pan cook up the rest of the chicken thighs (season with a little salt & pepper and saute in olive oil over medium high heat until cooked through — they are very thin, so will cook quickly) and chop into pieces
  • Serve with egg drop soup
  • And with mandarins

Saturday

  • Leftovers, family pizza night (ALDI sells nice big take-and-bake deli pizzas), or order in.

Things to know about these meal plans

A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, adapt the recipes in this ALDI meal plan to your family’s preferences. Or, just use the ideas here to supplement your own meal planning! See: Pantry staples to stock up on and how to modify a meal plan for your family.

** ad markets & dates

This week’s ALDI meal plan reflects prices from the current week’s ad (running 11/29-12/5 in Sunday ad markets, and 12/2-12/8 in Wednesday ad markets). Non-advertised prices are from my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 12/6/20.
