Here’s a little recipe I threw together for Middle School Guy recently — he ran cross country this fall, so has really been packing in the protein and is always in need of quick, filling weeknight dinners around all his fall activities.

These Bacon Wrapped Chicken Cheddar Pinwheels fit the bill nicely, and proved to be a big hit! (You have to love a super easy sheet pan recipe during this busy fall…)

I just added a little smoky garlic flavor to these chicken pinwheels with smoked paprika and garlic powder, but you could easily change the recipe up a little by swapping out the seasonings. (Don’t add salt, though, since the bacon and cheese are already plenty salty on their own…)

Five Ingredient Bacon Wrapped Chicken Cheddar Pinwheels

Ingredients

1.5 lbs chicken tenders (about 12 tenders)
6 pieces of bacon
3 slices deli sliced sharp cheddar cheese
garlic powder, to taste
smoked paprika, to taste

Directions

Preheat oven to 425 degrees.

Trim chicken and slice bacon pieces in half. Top each chicken tender with half a piece of bacon, then roll each up into a pinwheel shape and place these evenly on a rimmed baking sheet.

Season the chicken pinwheels with garlic powder and smoked paprika, to taste. Top each with 1/4 of a slice of cheddar.

Bake the cheddar-topped chicken pinwheels at 425 degrees for 20 minutes.

Note: This recipe makes about 12 pinwheels. If any of your tenders is disproportionately large, cut it in half lengthwise before topping with bacon. Note also that the bacon will not get crispy when cooked this way, but that it should be cooked through.

These five ingredient chicken pinwheels are both low carb & gluten free, and such an easy weeknight dinner option when paired with a green salad or veggie. (Here, I just steamed up some broccoli in the interests of time.)

Astute readers will also note that there are already a couple of chicken pinwheels missing from this photo, because Middle School Guy got there before I did. I guess that’s either the measure of a good recipe, or of just how darn hungry he was! I actually liked the leftovers even better cold out of the fridge, but to each… their own. 🙂
