Sheet Pan Sausage, Green Bean, and Potato Dinner
Simple comfort food sheet pan dinners are the best! Today's Sheet Pan Sausage, Green Bean, and Potato Dinner is easy, extra flavorful, & affordable.

How about a simple one pan Sheet Pan Sausage, Green Bean, and Potato Dinner today? This is the easiest, peasiest (OK, technically there are no peas...), most affordable-est sheet pan dinner you'd ever like to see in the August 6 edition of Sunday Scratchups: Your weekly recipe from scratch around grocery sales and affordable ingredients.
(Oh and speaking of sales: I buy the highly rated Zoe extra virgin olive oil pictured here on Amazon, and highly recommend it.)

This week I bought a couple of packs of smoked sausage and kielbasa at a local grocery store's 50% off moving sale. That made the pack of Polksa kielbasa I used here just $1.50, but you can also pick up a pack for around $2 every day at ALDI -- making this a frugal one pan dinner option anytime.
Note: How prices have changed -- kielbasa is now up to $2.89 everyday at ALDI, a few years later.
Sheet Pan Sausage, Green Bean, and Potato Dinner

Ingredients
One 13.5-14 oz fully cooked smoked sausage or Polska kielbasa, sliced into thick coins
½ lb fresh green beans, trimmed and cut in half
1 lb red or yellow potatoes, diced
½ a yellow onion, roughly chopped
6 whole garlic cloves
3 tablespoon olive oil
1 teaspoon seasoned salt
2 teaspoon Italian seasoning
1 teaspoon rosemary
Black pepper, to taste
¼ cup shredded Parmesan (optional)
Directions

Spray rimmed baking sheet with cooking spray. Add sausage and veggies to a large bowl, then drizzle with olive oil, add seasonings, and toss to coat. Spread seasoned sausage and vegetables out on the baking sheet and roast at 425 degrees for 40 minutes, stirring halfway through.

Remove from oven and immediately sprinkle with Parmesan (optional, yet recommended).
Note: You can substitute chicken sausage and sweet potatoes to lighten up the recipe a little, if desired. Be sure to cut the potatoes fairly small as shown here, so that they cook through.
One pan comfort food at its finest

Long-time readers might note that this sheet pan sausage, green beans, and potatoes recipe bears some resemblance to the always-delicious sheet pan chicken thighs with green beans & red potatoes. This is because easy sheet pan meat+potato+veggie recipes are the bomb, guys -- and this particular iteration is so good. No leftovers here!
You can always change things up with different meats and veggies; just keep your seasonings complementary & proportional and think about the right cooking times for the ingredients you choose to use. We just added corn on the cob on the side here to round out the plate, because that's also in season and on sale this week.
This easy one pan dinner recipe is naturally gluten free (as long as your sausage is).

Loved the recipe. It was a big hit.Thank you.
Glad you enjoyed! 🙂
OYGosh! I doubled the veggies and tripled the sausage for my brood of 5 men plus me....teo pans full.
Gone! All gone! This one is a keeper!
I meant OMGosh!
LOL! Awesome. It's amazing how much they can eat sometimes. 😉
Delicious! Keeping this one in the regular rotation. Thanks for sharing.
I have added to my menu for tonight. I have fixed this on top of the stove too. But I love the idea of baking this. Thank you for the passing this on. Sandy
Made this tonight and there’s not a crumb left!! Very delicious!
Very Good! I have made this a few times now. Everyone in the house enjoyed it the first time and asked to have it again the next week. Thank you for the great recipe.
Awesome! So glad you guys enjoyed -- I love these easy sheet pan dinners. 🙂
This was a huge hit!!
Made this last night, but doubled the sausage. We all agreed that this needs to be a regular at our house. Thanks for another GREAT recipe!!
Tried this tonight and my husband and I really enjoyed it. Definitely a keeper!!!! Thanks for sharing!!!!
Has anyone tried freezing this and then making? Any tips?
Potatoes tend to change in texture when you freeze them -- since it's such a quick dinner to chop and make, I don't know that I'd try freezing it.
Has anyone made it with can green beans?
Very quick, economical, healthy & YUMMY USED turkey kielbasa & fresh green beans + onions NO potatoes watching carbs😊👍thank you so much!
I used vegan sausage, extra green beans, no potatoes, canned roasted tomatoes, rosemary, basil, lemon pepper Ms.☺Dash, on top of barley. Tomato sauce would fit the bill, too.
We liked it, of course!
I don't see a link to email to myself so I can add recipe to my email folder. Is there a solution to this dilemma??
Thank you!
You can copy/paste the print version into your email, or just paste the link into an email to yourself? Glad you enjoyed! 🙂
Def a 5 star recipe! I added a yellow pepper because it was going over the edge and used “just add Italian herb” stir in herb blends from the cooler section in the produce department. I didn’t use the cheese but think it would be good that way as well! Thanks for the recipe!
Can I do it in a smoker bbq in a cast iron pan?
Having never used a smoker BBQ, I couldn't tell you. If you try it, let us know how it turns out, though!
Preparation was quick and easy and the meal tasted fine. However, it did not do the green beens we picked in the garden yesterday morning justice. They were shriveled. Maybe I will try the recipe again with carrots instead. I also found that 40 minutes were too long and maybe 425 degrees was too high. We backed the meal at 425 for 30 minutes.
This was amazing!!!! My husband and I both loved it. I loved the whole garlic cloves and whole rosemary all roasted together. It’s a keeper.
I haven’t loved other sheet pan recipes I’ve tried but this one was great! I used Gilbert’s cheddar chicken sausages and fresh green beans and potatoes that needed to get used up. This is definitely going in the rotation when I have fresh green beans!
Scaled back on the seasoning because I didn't have the ones listed - just used salt and pepper and Italian seasoning. Was still delicious and super easy. Had a green and red pepper in the fridge so threw those in as well. Great way to use up my CSA box! Will definitely make again.
Could I use canned green beans?
I've never tried. If you do, drain them really well -- & I'd worry they'd get a little mushy in a sheet pan dinner.
I made this for the first time last night. I'm not much of a cook and I'm always on the look out for simple recipes. This was simple and delicious! I can't wait to make it again. I did forget the cheese, but it was just fine without it.
So glad that it worked for you, even without the cheese! 🙂
I'm making this tonight using turkey sausage (from Aldi!) Something I learned: use a really really big bowl for these ingredients, it makes a lot. It's still cooking but smells really good!!
