These Vegetarian White Bean Wraps with Feta & Guacamole are a filling 20 minute Meatless Monday dinner option — so easy on a warm spring or summer evening, without needing to heat up the stove!
Happy day-after-Meatless Monday, where I tell you today about what I made yesterday. That’s OK though, because any weeknight is a great time for these Vegetarian White Bean Wraps with Feta & Guacamole. And as for that Meatless Monday? It keeps rolling around again like… clockwork.
Look at all that filling veggie-packed goodness! You can serve these white bean & veggie wraps with just some fruit & chips on the side, for a complete easy, light dinner on a warm evening.
Today’s vegetarian wraps were inspired by a pack of red pepper hummus protein wraps I found on special buy at ALDI this week. To be honest, though, I wasn’t super impressed by these. They were fairly gritty, didn’t have a lot of flavor, and didn’t roll up especially well, so I’ll go back to their regular spinach wraps next time. ALDI’s refrigerated guacamole, though, is always a good call — and the white bean, guac, feta, & veggie filling here worked together to more than make up for any shortcomings on the wrap end of things. 🙂

Vegetarian White Bean Wraps with Feta & Guacamole
2 cans Great Northern and/or Cannellini beans, rinsed and drained (I used one of each)
1/2 cup feta crumbles
2 Tbsp diced onion
1 Tbsp olive oil
1 Tbsp red wine vinegar
1.5 tsp minced garlic (about 3 cloves)
1 tsp Italian seasoning
1/4 tsp crushed red pepper
4 wraps of choice (I used hummus protein wraps)
8 oz prepared guacamole
4 oz fresh spinach
1 cucumber, peeled and sliced
4-6 small Campari tomatoes, sliced
Slice your cucumber and tomatoes; dice the onion and mince garlic.
Rinse and drain the beans, then place them in a large bowl. Mash beans slightly with a potato masher, leaving them fairly chunky for texture.
Mix the feta crumbles, diced onion, olive oil, red wine vinegar, minced garlic, and spices into the mashed beans.
Spread 2 oz guacamole down the center of each wrap. Layer on the spinach, tomato slices, cucumber slices, and white bean mixture.
Roll up wraps, and enjoy!
Note: The ALDI special buy high protein/lower carb wraps I used here don’t roll especially well, hence the toothpick you’ll see holding mine together in the photos. If you’re not specifically looking for high protein, ALDI’s spinach wraps roll much better (and taste much better, although that might be personal preference).

These easy white bean wraps are a simple vegetarian dinner recipe, or the white bean/feta mixture makes for some easy lunch meal prep for your week. Simply mix it up, chop your veggies, and keep everything in the fridge for easy wrap assembly throughout the week whenever you need a quick lunch.
The white beans + feta are garlicky good, while the cucumber gives you a little crunch, the tomatoes a little juiciness, and the guacamole adds a little smooth avocado flavor.

Perfect no-cook recipe for the summer, and my family LOVED it! I wasn't expecting them to really enjoy it, and actually cooked up some chicken to go in the wraps as well, but they all commented on how this should go into the meal rotation for summer, and I was only barely able to claim a little bit of leftovers for my lunch tomorrow!
