Midweek meal planning week of 5/20/15

Welcome back to Midweek Meal Planning for the week of 5/20/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays.

This week is apparently BBQ week at the Mashup Mom household! Guess we’re ramping up for Memorial Day…

  • Sunday: MashupDad grilled chicken, potato packets, the chicken sausage from Fresh Thyme + salad. Grilled chicken, by the way? Excellent with leftover chimichurri sauce.
  • Monday: Leftover grilled chicken.
  • Tuesday: Salsa Verde Skillet Pork Chops with the clearance meat I picked up at ALDI. Made tacos out of them with ALDI tortillas and guac from the $.39 avocados.
  • Wednesday: MashupDad grilled everything — Pub burgers, portobellos, and clearance brats from Jewel — and we have some nice leftovers. Also corn on the cob, asparagus, strawberries.
  • Thursday: Lemon Garlic Roasted Chicken with the clearance Harvestland from Jewel. With the end of a bag of potatoes + a bagged salad from Jewel earlier this week.
  • Friday: Leftovers.
  • Saturday: I’m guessing more leftovers.

I am on day 23 of Whole30 so I don't won't type out my cooking/eating there is so much to it! lol... but I am going to try your lemon garlic roasted chicken tonight it is whole30 compliant but with mix of red and sweet potatoes! I am going to try and figure out a variation of your cauliflower waffle bread things :-) Friday: Meatloaf and red mashed potatoes. Saturday: Leftover meatloaf and hopefully my rain check on pub burgers will be in for weekend grilling.

Have you lost any weight on the Whole30? I took a look at the plan, and I can't see myself doing without gluten and dairy for 30 days. They won't let you have canned beans either, except for green beans either right? I usually don't eat red meat, and I don't eat a lot of meat in general, and so this diet would not be a good fit for me.

How were the Jewel $1 pub burgers? Was your corn any good? We are sampling an ear for lunch today and if it's sweet, will go back to Jewel to load up with the Saving Star deal. We didn't get any burgers this time because we have sooooooooooooo much chicken to eat and I was fearing they may be super fatty since someone here said they got a greasy batch last time. I know they were lined up in the Frankfort Jewel at the meat counter yesterday!?

The pub burgers were great! MashupDad grilled up four of them for us last night and they weren't greasy at all. The corn was sweet, but I had to dig at my store to find non-moldy ones, so only got four ears.

Sunday: We had guests so we splurged on grilled pub burgers, chips fruit Monday: Pizza (it was my birthday ;-)) Tuesday: Pasta with spinach, tomatoes,rotisserie chicken from freezer, portabello mushrooms Wednesday: 3 Ingredient Chicken with the fixin's. Also made a roasted poblano Mexican lasagna for a friend. It was meant to be stuffed peppers, but the peppers got to soft and fell apart so I made a lasagna type dish with the peppers: brown rice, black beans, corn, chicken, cheese, cumin, chili powder and layered with poblano peppers. Thursday: Making home made spaghetti sauce so probably baked spaghetti with spinach and a bit of browned sausage from the freezer. Friday: grilling- I am thinking chicken and pub burgers so we have leftovers for Saturday Saturday: hopefully leftovers unless my "growing too fast" children eat all of it on Friday!
