Welcome back to Midweek Meal Planning for the week of 12/11/15! Itโ€™s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here. Or, you know, post on Friday because of the holidaycrazy... I'm about to run to Junior High Guy's winter concert here, but thought I'd get this week's post going for you first. ๐Ÿ™‚

Midweek meal planning

  • Sunday: Pot roast & veggies. Similar to this recipe.
  • Monday: Chipotle Cheddar Latkes with leftover chicken & other odds & ends.
  • Tuesday: Leftover pot roast.
  • Wednesday: Costco rotisserie chicken, salad, fruit, potatoes.
  • Thursday: Sandwiches & fruit, cut up veggies & guacamole -- quick dinner before school fund raiser roller skating party.
  • Friday: Going out to eat with brother-in-law's family after concert.
  • Saturday: Grilled salmon & broccoli.

    Mon: Italian chicken sandwiches and green salad
    Tues: Homemade chicken soup
    Wed: I don't remember. It's been a week of driving people around so the days blur together
    Thurs: Roast chicken with carrots and fingerling potatoes
    Fri; Baked ham and cheese sandwiches with nachos, brownies
    Sat: tacos

  2. I've been off my game lately but did ok this week
    Sun: American goulash, bread, salad
    Mon: hot dogs, chips, carrots
    Tuesday: Tacos
    Weds: beef tips, mashed potatoes, sugar snap peas
    Thursday: Buffalo Wild Wings .70 wings
    Fri: pizza
    Sat: pork roast in the crock pot, veggie of some sort, leftover mashed potatoes

  3. Monday: Chicken schnitzel, cabbage slaw, brussel sprouts
    Tuesday: Boneless pork loin from Jewel 99ยข lb sale (the super huge ones) used crock pot to cook the center portion, used teriyaki sauce and had rice and leftover brussel sprouts with it.
    Wednesday: Grilled Chicken and mac and cheese (potatoes for me)
    Thursday: Leftover pork, leftover pasta, mashed potatoes
    Friday: Frozen Pizza
