Midweek Meal Planning 5/6/15

Welcome back to Midweek Meal Planning for the week of 5/6/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays.

So this week the Mashup household continued on the “things wrapped in tortillas” path…

  • Sunday: I got a BOGO Chipotle text coupon for entering some mobile contest, so…
  • Monday: Leftover fish tacos. ($3.97/lb mahi mahi from Fresh Thyme, cheap avocados and tortillas from ALDI).
  • Tuesday: Portobello Poblano tacos with the $.49 mushroom caps from Jewel and more ALDI tortillas. (Recipe to come on Sunday!)
  • Wednesday: $6 Jennie-O turkey breast from this past weekend’s $.99/lb Jewel sale, baked potatoes, spinach salad ($.97 at Jewel over the weekend).
  • Thursday: Kids are having leftover turkey & potatoes, and MashupDad and I will have seafood fest later on courtesy of Fresh Thyme.
  • Friday: MashupDad won’t be home, so the kids and I will clear out the fridge.
  • Saturday: I’m thinking maybe we grill something from the freezer, depending on the weather.

My menu is a bit limited because my DH and I started the likes of Whole30. However I just finished reading the book and discovered we were not totally compliant and so today starts my Whole30! :-) Monday: Crock pot full of chicken thighs that we ate and then had some leftover for rest of week. Tuesday: Sweet potato hash and leftover chicken Wednesday: Giant build your own salad (ground chicken with kick as a topper) Thursday: Leftover ground chicken into lettuce wraps. Friday: Tickets to dinner to support local Crew (Boy Scouts) I really need to take out a turkey tonight or at least a turkey breast and let it thaw for Sunday or next week! I have too many!

Your food pictures are getting very professional looking! Nice tacos. And AWESOME price of Mahi Mahi. Wow Sunday: Spicy Pop Pulled Pork sandwiches, cole slaw Monday: leftover pulled pork Tuesday: Enchilada casserole, guacamole, homemade salsa, chips Wednesday: grabbed a hamburger because everyone was running around, leftover salsa and enchilada casserole Thursday: pasta not sure yet what will be on it- either homemade sauce or veggies of some kind Friday: no idea thinking grilled chicken, roasted potatoes Saturday: friends bringing pizza over!!!

Well thank you! I have been working on them, gradually. :) The grand opening prices there have been amazing -- the mahi mahi last week, and this week I picked up a piece of ahi tuna (and it looks beautiful) for $4.97/lb.
