Midweek meal planning 5/14/15

Welcome back to Midweek Meal Planning for the week of 5/14/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays. Or Thursdays… and here’s why.

Yesterday afternoon Mr. 8 came home from school complaining that his throat hurt. A completely atypical 2 hour nap and sudden high fever later, and needless to say he was home from school today. (Although in the way of kids sometimes, already much better!) This morning, guess who woke up with a sore throat? Yes, yours truly was planning to cook tonight, but now I’m kind of in that cranky everything hurts phase… So between that and Mother’s Day, we’re all thrown off this week.

  • Sunday: Mother’s Day BBQ at my mother-in-law’s.
  • Monday: BBQ leftovers (we went home with a doggie bag…).
  • Tuesday: Mashup Dad and I had Portobello Poblano Tacos and the kids had leftovers. (I spent about $3.50 on peppers and mushrooms at Pete’s, plus the $.33 corn tortillas from ALDI and cheap avocados from the week before.)
  • Wednesday: Leftover tacos, and I made the kids chicken tacos with the last of some leftover grilled chicken.
  • Thursday: Whatever MashupDad brings home for dinner, since I’ve abdicated all responsibility tonight.
  • Friday: If I feel better, MashupDad and I will enjoy the ahi tuna from Fresh Thyme with chimichurri, over a salad. The kids? Something easy for them: Breakfast for dinner, or gluten free pasta & toast, or GF chicken nuggets…
  • Saturday: Skillet sausage/peppers/onions with the cheap chicken sausage, Vidalia onion, and red bell peppers from Fresh Thyme.

Last week I also took some leftover chimichurri and thinned it out to use as salad dressing — SO good! I’ll write the recipe down next time and post it for you guys soon, because it’s my new favorite thing ever.

Going to try this chimichuri recipe soon. If even close to the cashew chicken I am sure it will become a new fav. :-) Do you think it would go well with any other meats?

It is A-MAZ-ING with other meats. I put some on grilled chicken last night. I've used on hamburgers. If you try it, let me know what you think!

Bad week of eating around here! Sunday: Brunch on Mother's Day Monday: ordered pizza Tuesday: hot dogs from Costco (those giant things!) you can buy them in bulk, roasted potatoes Wednesday: chili (ground beef from long ago Jewel sale) Thursday: Chicken thighs in the crock pot, rice. Thighs from Caputos $1.79, Friday: stuffed poblano peppers, salad Saturday: Something in the crock pot since it is a crazy day. i think Asian/Korean Tacos with coleslaw.

I bought the peppers and onions also. Would have t go back for the sausage. Do you just sauté everything in a little olive oil? Maybe done Italian seasoning ? Sounds like a good one pan meal for Sunday. Saturday's dinner will be the sante fe enchilada bake from the back of the Kraft Mexican cheese bag.

Add some garlic in there for sure -- If you use their sausage it has a pretty strong flavor so you might not need Italian seasoning. You can add some crushed red pepper if you want to give it more of a kick, or just season to taste.
