Mashup Mom Meal Planning: Week of 6/5/16

Let’s get back to meal planning, here: I’m going to try to start posting meal planning posts every Sunday, because several of you have noted that midweek is just too late. (Yes, it’s not actually Sunday, but I’m a little behind from being sick all weekend — hence Chicken Soup Sunday!) Please comment here with your own meal plans, recipe ideas, and what you’re going to make with what’s on sale this week, and we’ll continue to help each other out.

Little Perdue chickens were $.49/lb at Jewel all weekend, so the four I picked up are prominently featured in my meal plan. Mine were sell by 6/10, so should stretch through the week without freezing. What are you guys making with yours?

Meal Planning in the Mashup Mom household

  • Sunday: Awesomely Fantastic Homemade Chicken Soup.
  • Monday: Roasting up two of the little chickens with some potatoes, with spinach & romaine salad on the side. (Similar to the Lemon Garlic Roasted Chicken here.)
  • Tuesday: Leftover soup, chicken, and potatoes.
  • Wednesday: High School Guy and his friend are cooking us dinner, and apparently it will be some kind of pasta. We’ll see!
  • Thursday: I also picked up cheap mozzarella at Caputo’s recently, so am thinking of dismembering the last chicken and doing some kind of oven baked Caprese thing. Still scratching that up in my head, so stay tuned. 😉
  • Friday: Leftovers, if we have enough. If not, it’s likely to be breakfast for dinner.
  • Saturday: MashupDad is grilling up salmon from the freezer — because we’ll be tired of chicken, lol.

Sunday - assorted leftovers from the previous week Monday - Chicken sausage from Aldi, salad and fruit Tuesday - My 17year old dear daughter tried her hand at homemade, one pot Swedish meatballs. They turned out very good. Wednesday - Same sweet daughter is making us our anniversary dinner (25 years!) before the DH, and sons head to work and we go to a church event. She is making chicken stuffed with ricotta and spinach with a side of rice. I am getting spoiled this week! Thursday - leftovers Friday - we have a certificate expiring for pizza, so we'll use that Saturday - celebrating an early fathers day with my dad and having dinner at his house

BTW - your beer shampoo review cracked me up! And the love the odd amazon posts.

Happy anniversary -- we just celebrated 19 years this month! :) And a homemade dinner sounds like a wonderful anniversary gift.

Lovely picture of you, Rachel! I am punting here this week. Very busy and dinner has been rough to get prepared and on the table. Sunday: baseball game so we ate out, kids at home made stuff in freezer Monday; Aldi chicken sausages and Nathan hot dogs with coupon BOGO for .05 and coleslaw Tues: Grilled frozen salmon from Costco, rice, coleslaw Wed: Grilled chicken with basil pesto from plants in yard, BLT salad, maybe potatoes Thurs: Stuffed pork tenderloin (sun dried tomatoes, tomato paste, basil) wrapped in bacon (from last night), salad, potatoes Friday: baseball game so I think leftovers I would love to have leftovers, but never enough leftover! Saturday: baseball and birthday party so who knows, fend for yourself night. lol!

Sun-Grilled Pork Tenderloin with asparagus (pork tloin and asparagus from Jewel sales) Mon- Roasted chicken in the crockpot (chicken from Jewel) Tues-Grilled chicken breast (chicken from the freezer, Zaycon) Wed- Shepherds Pie (ground beef from the freezer, Zaycon) Thursday- leftover day
