Here is your easy ALDI meal plan for the week of 10/23/16. Pick up everything on the shopping list below, then start cooking on Sunday! Hope you find it useful.

Note: I try not to repeat the same recipe here more than once a month, but you will see favorite easy recipes come up again on these weekly ALDI meal plans as the same meats and produce items come up on sale again. ?

ALDI meal plan week of 10/23/16 – 10/29/16

Six complete dinners for a family of four for $60.00

Note: Prices are collected from this week’s ad and my local store, but may vary by location. I’m assuming here that you already have pantry basics like olive oil and spices on hand.

Six Easy Dinners from ALDI for $60.00

  • Sunday: One pot mozzarella chicken dinner. Sides: Grapes & apple slices.
  • Monday: Meatless pasta — Cook Priano penne rigate according to package directions and drain, reserving a little of the pasta water. Slice one pack mushrooms and saute in separate large pan with a little olive oil & minced garlic; add one pack grape tomatoes about 3 minutes in and continue sauteing until tender. Stir in hot cooked pasta, then add spinach and stir in until wilted. Add Priano pesto to taste and stir to combine, adding a little reserved pasta water to thin out if necessary. Season with sea salt, basil, and crushed red pepper to taste. Sides: Romaine salad, Texas toast.
  • Tuesday: Slow cooker Buffalo Chicken Burritos (sans the Gorgonzola guac; use half the pack of chicken breast). Roll up in tortillas with one pack of the guacamole. Sides: Romaine salad, grapes, celery sticks.
  • Wednesday: Skillet Caprese chicken (use the other half of the chicken breast pack). Sides: Serve over fresh or sauteed spinach, plus Season’s Choice whole onion rings.
  • Thursday: Pan fried pork chops — just season with seasoned salt & pepper, then dredge in flour & fry up in canola or corn oil (do in batches so you don’t overcrowd the pan, and be careful not to overcook). Side: Pan roasted diced Yukon gold potatoes, carrots, and garlic.
  • Friday: Slice up your leftover pork chops and make pork chop sandwiches with sauteed onions on ciabatta rolls. Sides: Sliced apples, plus carrot & celery sticks with guacamole.
  • Saturday: Leftovers — or date night :)!

I just want to say thank you for the time and effort you put into your meal plans. I just started following it a couple of weeks ago and I am so happy to be integrating more fresh produce into our meals that I would not have normally done in the past. You rock!!!
