Stockpile recipe -- slow cooker Mexican beef stew

Mine looked somewhat less fancy. But I made this slow cooker Mexican beef stew overnight in the crockpot, and it smelled so good this morning that I just had some for lunch. Not bad! I made a couple slight modifications because I didn't have Mexi-corn and thought potatoes would be nice.
About 1.7 lbs beef stew meat (2 little packs from the last Jewel fav 4).
2 14.5 oz cans Hunt's diced tomatoes with garlic (from the last Jewel ConAgra deal).
about ½ a chopped onion ($.99/3-lbs at Ultra last week).
heaping teaspoon chili powder
1 pack OEP HOT taco mix (I think this was something like $.17 on the last Ultra deal).
1 can Wild Harvest organic black beans (bought it when they had the $1.00 printable on their site and they were 10/$10.00).
1 can Green Giant corn (you know what I paid for that yesterday!).
1 small can diced chilis ($.55 on clearance at Target).
a couple of potatoes ($.99/5-lb bag at Jewel this week).
Had mine with some shredded cheddar cheese and the roasted garlic bread from Costco -- yum. So what have you made from your stockpile lately? 🙂





Rachel I also made this a few weeks ago when you mentioned it on your blog. I changed a few things and thought it was delicious. I also made the Grands little pizzas twice since you first mentioned it! Thanks for helping me use up some of my Jewel items!

What'd you change? I didn't actually end up making it when I initially found the recipe, but finally got around to it! The kids would just be happy to eat the Grands mini pizzas every darn night...
