Welcome to another round of easy weeknight recipes around what’s in Rachel’s fridge; AKA: I really didn’t feel like shopping! This is also another round of less than beautiful recipes (sooo much orange…), but this Sausage & Pepper Chipotle Flatbread Pizza recipe more than makes up for its bad looks with its good taste. 

So, do stick with me here! Don’t always judge a recipe by its cover: Just be sure also to throw a little chopped fresh parsley or green onion onto your finished pizzas for some much needed contrast. 🙂

I almost always have a pack of ALDI’s Never Any chicken sausage on hand to use in last minute weeknight meals. So, I pulled that out of the fridge to build onto and continued digging: Turning up a little log of goat cheese, one bell pepper, and some chipotles in adobo left over from a recent batch of vegetarian chipotle taco soup.

Sausage and peppers and goat cheese, oh my! That screams pizza to me, right? To make these flatbread pizzas, I doctored up a little can of tomato sauce with a couple of the chipotles to make a spicier backdrop to complement the sweeter pepper and the chicken & apple sausage. Then, I made short use of a pack of flatbread wraps for the crust — thankfully, because I’m not quite sure why I’d purchased them in the first place.

Boom: Sausage & pepper flatbread pizza was born. Chipotles, by the way, turned out to add the perfect kick to the pizza sauce; I’ll definitely be trying that little trick again.

Sausage & Pepper Chipotle Flatbread Pizza

Ingredients

6 flatbread wraps
2 tsp olive oil
8 oz can tomato sauce
2 chipotles in adobo, chopped (cut down to 1 if you are sensitive to spice)
1/2 Tbsp sauce from chipotles in adobo
1 tsp oregano
12 oz fully cooked chicken apple sausage, sliced into thin coins
1 yellow bell pepper, thinly sliced
4 oz goat cheese
1/2 cup shredded Parmesan
Chopped fresh parsley or green onion, to taste

Directions

Preheat oven to 350 degrees. Arrange flatbread wraps on two rimmed baking sheets, then brush each lightly with olive oil. Pre-bake the flatbread at 350 degrees for two minutes to crisp up the crust a bit.

Meanwhile, mix the tomato sauce, chipotle, chipotle sauce, and oregano in a small bowl and slice up the sausage and pepper.

Remove baking sheets from the oven and brush each wrap lightly with the chipotle tomato sauce mixture, noting that you’ll likely have some left over.

Top each wrap with sausage and bell pepper slices, then dollop them with goat cheese and sprinkle with Parmesan.

Bake the flatbread pizzas at 350 degrees for 10 minutes, switching oven racks halfway through, then broil for another 1-2 minutes to brown.

Garnish the finished pizza with chopped fresh parsley or green onion, slice, and serve.

Note: Wraps will overlap slightly on the pans, but you can cook them four at a time to avoid that if you prefer.

These quick cooking flatbread pizzas should easily feed a family of four as a light yet filling weeknight dinner when you add fruit and/or salad on the side. My two boys and I each put away 1 1/2 pizzas, so the six wraps in the package worked out perfectly (with a little left over for someone’s lunch the next day).

This recipe packs a lot of flavor into just a few ingredients; the spicy chipotle and tangy goat cheese provide just the right backdrop for the sweeter sausage and peppers. Hope you enjoy these simple flatbread pizzas as much as my family did!
