Portobello chimichurri grilled cheese
I'm really enjoying the heck out of the $.45 portobello mushroom sales at Jewel. Last night MashupDad grilled some up along with our pub burgers, and today for lunch I made a grilled cheese on sourdough with a leftover grilled portobello & chimichurri. This was so very good that I just had to share the photo with you all. 😉

How did you get those great grill marks on that bread? Picture perfect!
I used my handy Lodge cast iron grill pan -- ooh, it's on sale, I think I will also post it.

I'm impressed. Do you have to put a weight on the sandwich?
No -- not with this grill pan. I pressed it down a little with the spatula, but it's not smashed as flat as a panini or anything.
