ALDI meal planning week of 1/21/18 – 1/27/18

I’m assuming here that you already have pantry basics like cooking oil, condiments, and spices. 🙂 *** Read through the recipes before you shop to make sure you have the necessary pantry staples on hand. 

Six Easy Dinners from ALDI for $60.00

*** Note: This week, the meat special buys differ from the in-store preview ad, as well as regionally — In case you’re wondering why this week’s meal plan doesn’t make use of them, as it usually does!


ALDI meal plan — Start cooking 1/21/18

  • Sunday: Lemon chicken skillet madness (reserve 1/2 cup artichokes for Weds). Serve with red lentil “mashed potatoes” (be sure to add the optional seasonings).
  • Monday: Slow cooker chickpea lentil stew (use red onion). Serve over cooked rotini, with sliced pineapple on the side.
  • Tuesday: Easy beef enchilada pie (substitute a can of diced tomatoes with green chilies for one of the cans of tomato sauce and omit the diced green chiles, since many ALDIs no longer carry; use red onion instead of yellow). Serve with lazy almost guac (mash up an avocado with a little lemon juice & sea salt to taste) and quick pickled red onion (this is great to make the night before and keep in the fridge til ready to use).
  • Wednesday: Greek style pepperoni naan pizza (use the new flatbread, and cut each piece in half so you end up with four individual pizzas!). Have sliced mango on the side.
  • Thursday: Easy chicken fajitas (cut chicken down to 1 lb & substitute about 1 Tbsp lemon juice for lime, red onion for yellow). Serve on corn tortillas + the rest of your pack of flour tortillas and top with sliced avocado.
  • Friday: Greek tortellini salad (cut up the rest of your pepperoni, and substitute it for the salami).
  • Saturday: Leftovers, family pizza night (ALDI sells a nice big take-and-bake pizza), eat out, or date night.

Or, maybe less… 🙂 These meals will likely run you even less if you supplement this week’s ALDI purchases with clearance meat you already have in your freezer, pantry staples you picked up on sale, produce you already have on hand, and/or sale produce from your local produce market. Things to know about the ALDI meal plans

A couple of notes

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste, or if you have other ingredients to use, you can adapt the recipes in this ALDI meal plan to your family’s preferences — or just use the ideas here to supplement your own meal planning.

Ad markets and dates

This week’s ALDI meal plan reflects prices from the current week’s ad (running 1/14-1/20 in Sunday ad markets, and 1/17-1/23 in Wednesday ad markets). Non-advertised prices were collected on 1/17/18 at my local store in the Chicago suburbs, but non-advertised prices and produce deals *may vary* by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 1/21/18.

I have been following your weekly plans since June 2017 and let me just say, you are a gem! We have yet to find one recipe that we don’t like! The convenience of the shopping list with the recipes has been a Godsend! I am a full time grad student, who also works almost full time hours, while also going through clinicals, and your meals have made my life so much easier! Every week when I do my grocery shopping, or talk to co-workers and fellow students, I can’t help but tell people about your website and how much of a blessing it truly is! Keep up the amazing work!

Do you know how many carbs the red lentil mash is? Hubby is doing keto. I love your recipes & the ones I make are always a hit! I wish I could make more, but I can’t do a lot of dairy (but Hubby & dd love it), dd can’t do fructose (trial & error with foods, but she’s also very picky), & a keto Hubby, makes meals a pita. Your crockpot italian beef is always a hit with everyone though!

I find that most often it is SUPER simple to substitute her plan and still stay pretty close to her budget. I feed 6 each week and after getting our other weekly ingredients, I almost always come in under $100. (We live in Florida where we don’t get as many good sales as you do in Illinois!)

Glad at least some of the meals are working for you! Lentils are a legume, so they are pretty much all carbs. Good carbs, but carbs nonetheless -- my bag from ALDI here is showing 63g per 1/2 cup (and 11g fiber). You might substitute something like a cauliflower mash for a low carb alternative, or even serve the chicken over cooked riced cauliflower, since it does make a lot of sauce. :)
