Midweek meal planning 9/30/15

Welcome back to Midweek Meal Planning for the week of 9/30/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays.

It’s been a big leftovers week here, but now we’re out — uh oh! 😉 It’s also a quick dinners week, since activities and late work things are taking us all over the place. Are you getting that with fall activities in full swing, too?

Midweek meal planning

  • Sunday: MashupDad grilled hamburgers, potato packets, and cauliflower packets, which we had with fruit.
  • Monday: Leftover burgers, etc.
  • Tuesday: Leftover chicken from Saturday.
  • Wednesday: A rotisserie chicken from Pete’s Market, salad, strawberries, and potatoes.
  • Thursday: Chicken fajitas with some of the cheap mushrooms, spinach, avocados, and tortillas from ALDI earlier in the week.
  • Friday: I’m thinking pasta since my Barilla Pronto Pasta idea from last week got bumped, and if all goes according to plan there should be enough fajitas left for low carb MashupDad.
  • Saturday: Junior High Guy is taking FCS in school and thinks he may want to attempt cooking for us (with some assistance). He’s waffling between lasagna and pizza, so we’ll see what actually happens…

Actually believe it or not ComEd has sent me several flyers that compares my home electric use with others. Ours is always higher I thought because we have a Ford CMax, that is an electric/Hybrid car ...maybe its been all my crock pot cooking!

Sunday - FIFO night (leftovers) Monday - Put Rachel's Cheesy Chicken bake in the crockpot (it was really good) - spinach salad and melon Tuesday - Beef Barley Stew in the crockpot - salad and fruit Wednesday - Chili in the crockpot - melon Thursday - FIFO (leftovers) Friday - thinking we will still have some leftovers that we can take camping:) Saturday - Steaks on the grill, baked potatoes, salad

OK, What does FIFO stand for? Find it for oneself? LOL I'm sitting here trying to figure it out.

I have floundered all week so far... no planning just pulling things together each night.

Tonight: My last of Zaycon chicken breasts in the crock pot frozen, and threw on some Kraft recipe makers for pot roast :-) lol... bought that at Target on clearance a while ago. I have some Costco mashed potatoes in the fridge and with Cross Country meet tonight I call that a wrap.

This week has been a blur. I am hoping that on Sunday with no kids around, I will be able to sort through my freezer and do some freezer meals that I can plan to cook in the crock pot or some easy healthy dinners. I bought some wipe boards on clearance I plan to mount to the outside of them to keep track.

Debating on the upcoming Zaycon (Nov. for me) how has the chicken been lately?

I didn't buy the last batch but have been using up the last of spring from the freezer and it's been good. And yes, I need to get back on the Crock Pot meals for sure!

Sun: leftovers from DH birthday celebration Mon: Crockpt BBQ beef sandwiches, salad Tues: Chicken Noodle Soup, bread Wed: I was in Rachel's neck of the woods with my 11yo for a focus group ate at the Patio. It made my son's day! everyone else frozen pizza Thurs: baked pasta with sausage, spinach Fri: I have no idea maybe cheesy chicken bake because i can't stop thinking about it. Sat: out with friends so kids will have frozen pizza/leftover pasta
