Easy Craisin Pretzel Bark — Gluten Free, Dairy Free!

easy-craisin-pretzel-bark

Welcome back to Sunday Scratchups, your weekly recipe from scratch around grocery sales and affordable ingredients. This week, we have seen really nice sales on holiday baking Craisins and pecans — and ALDI now carries these amazing gluten free pretzels. So I was looking at the Craisins and at the pecans and at the pretzels I bought this past week, and thinking there had to be SOME kind of delicious allergy friendly holiday treat there…

… and let me warn you straight up now, Craisin Pretzel Bark is incredibly addictive, hitting just the right balance of sweet & salty, crunchy & chewy. Your most expensive ingredient here will be the dairy free chocolate chips. I used Enjoy Life that I’d picked up on sale, with coupons at Whole Foods a long time ago, but you can also sometimes get these at a nice price on Amazon. If you’re not sensitive to cross-contamination, Trader Joe’s also sells chocolate chips for around $1.99 that don’t contain dairy ingredients, but are processed on shared equipment.

Easy Craisin Pretzel Bark — Gluten Free, Dairy Free

ingredients

Ingredients

1/3 cup gluten free, dairy free pretzel pieces
1/3 cup Craisins
1/3 cup pecan pieces
4-5 oz dairy free chocolate chips
Kosher salt

Directions

pretzel-craisin-bottom

Line an 8″ round pan with parchment paper and spread pretzel pieces and Craisins across the bottom.

pour-on-chocolate-add-pecans

Melt chocolate chips in microwave — I used the rest of an open bag of Enjoy Life semi sweet mega chunks here, about 4-5 oz. Pour melted chocolate evenly across pretzels and Craisins, then sprinkle pecan pieces across the top. (I used chopped pecans, but broke them up even smaller.) Sprinkle with a little Kosher salt.

Let harden in fridge about 40 minutes, then break into chunks. If any is left over (ha! I kid!), store in tightly covered container at room temperature.

Soooo good

Dangerously good. I mean, you have the sweet. You have the salty. You have the crunchy. You have the chewy. And, you have: The chocolate. Craisin Pretzel Bark hits every note, and ours was gone within a day. Luckily I’m now out of pretzels so can’t make any more… yet ALDI beckons…

Craisin Pretzel Bark would be an easy addition to a holiday party buffet, or you could tie some little baggies of bark with ribbon for gift giving. Super easy to make, too, so get the kids in on it!

I made this last night, it is really good. But I couldn't get the chocolate chips to pour out, it game out in climbs and was hard to spread.. I use semi sweet chips, would the milk chocolate chips melt runnier ???

I used semi-sweet -- it might be the brand of chocolate chips, otherwise, you can melt a little coconut oil in with your chocolate to help it mix and pour smoother.

I saw something similar at Costco, but without craizins, and with caramel. I even bought a big thing of pretzels and was going to experiment with them, chocolate, caramel dip we got cheap from Jewel and those cheap Planters nuts from Amazon (btw, those were removed from S&S, so no more cheap deluxe nuts).

I know, I miss those! Caramel is always good, but I was keeping these dairy free for Junior High Guy.

Sure, without coupons. But $.50 for 5 oz works out to $1.60 a pound -- and it sounds like some people had picked some up as low as free at Kroger after coupon on the last sale. :)

The 5 oz bags are the ones that are going on sale for $1.50, so $.50 after coupon.
