Feeding a family of four? Just double the recipe, and do a couple of batches. Ten Minute Tomato Hummus Soup From Your Vitamix

Ingredients

1 tsp olive oil
1/4 of a medium yellow onion, diced small
1/2 Tbsp minced garlic
1 oz cream cheese
1/2 tsp thyme
1/2 tsp basil
dash of cayenne
Sea salt, to taste
Black pepper, to taste
5 oz roasted red pepper hummus
14.5 oz oz can crushed tomatoes
1 cup vegetable broth

Directions

Heat olive oil in a small skillet over medium heat until shimmering. Add onion and saute for about 3 minutes over medium heat or until softened, stirring occasionally. Add garlic and continue to saute for another 30 seconds.

Add the sauteed onion & garlic, cream cheese, spices, hummus, crushed tomatoes, and vegetable broth to your Vitamix container. Secure lid. Select Variable 1.

Turn your machine on, then slowly increase speed to Variable 10.

Blend for six minutes on Variable 10. Open your Vitamix carefully, taste soup, and adjust spice level if desired. Serve immediately.

Note: The super fast blades on the Vitamix tend to intensify flavors, so the seasonings have been reduced slightly from the original recipe.

This smooth & creamy tomato hummus soup is perfect either on its own or with grilled cheese.

What could i use instead of cream cheese I'm allergic to dairy

There are some good non-dairy cream cheese alternatives out there. Tofutti is good, Trader Joe's makes one, etc.
