Midweek meal planning 3/10/16

Welcome back to Midweek Meal Planning for the week of 3/10/16! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start to run out of steam, we buck the trend here. In Midweek Meal Planning, we plan dinners for the rest of the week while also looking back to see how we’ve done so far.

Here’s our week

We’re all going different directions this week, how about you?

  • Sunday: Grilled salmon with potato & cauliflower packets, fruit. This is our Sunday night go-to lately.
  • Monday: I was going to make chicken, but pulled it out of the fridge and it was definitely off (eww). So this became an impromptu scrounge things out of the fridge night, including leftover salmon & more.
  • Tuesday: Slow Cooker Buffalo-Lime Chicken with Gorgonzola Guacamole. This was an experiment — a yummy one, so I’ll be sharing the recipe with you soon.
  • Wednesday: I went out to lunch with a friend & brought home leftover pizza for the kids’ dinner (+ spinach salad & fruit), while working-late MashupDad had rotisserie chicken and I had leftover buffalo-lime chicken.
  • Thursday: MashupDad has a work dinner, and the kids and I are having (decidedly not low carb) Slow Cooker Cheesy Chicken Enchilada Chili (using up the rest of the rotisserie chicken).
  • Friday: Leftover chili for me and the kids + leftover buffalo-lime chicken for low carb MashupDad.
  • Saturday: Mr. 9 is going to a birthday party at which he’ll have pizza etc., while the rest of us are again going different directions, so it will likely just be something simple like sandwiches and salad.

That buffalo chicken looks yummy! I really enjoy the recipes you have shared with us. I made a pasta bake with leftover pasta cause we can never finish the enormous box of Angel hair from aldi. Rachel did you ever share your meatball recipe or not yet?

maybe it's that time of year to be running everywhere... us too! Sunday: family birthday at Biaggi's ;-) Mon: Crockpot pot roast with mashed potatoes Tues: Stouffer's Mac and Cheese, salad. my kids LOVED this. I NEVER buy frozen dinners $ but Jewel had a my mixx Q and so... Wed: Homemade meatballs and pasta. Experimented with my meatballs: ground chuck $2.99 at caputos, added 8oz ricotta and 1/3 c skim milk to the recipe. Wow! what a difference a keeper! Unfortunately, i made 3 lbs for my 16yo basketball banquet. we got 12. Thurs: Potato, asparagus (Caputos .69/lb!!!) onion fritatta, salad, fruit Fri: Grill pork chops or pub burgers (found too many pork chops in the freezer!)
