Sheet Pan Balsamic BBQ Turkey Meatloaf Dinner

Mini meatloaves and veggies, all on one pan? Oh yes! This Sheet Pan Balsamic BBQ Turkey Meatloaf Dinner makes it all possible.

This week’s Sunday Scratchups recipe around grocery sales & affordable ingredients features ground turkey, since I’ve been finding it on sale all over the place lately. So, recently I picked up a pack of cheap 90/10 ground turkey at my local produce store and decided to try making something different with this all-in-one Sheet Pan Balsamic BBQ Turkey Meatloaf Dinner.

This easy sheet pan dinner recipe features individual mini meatloaves for everyone, along with a built-in side dish of potatoes and green beans. Not being a ketchup fan, I decided to go here with a less traditional BBQ-balsamic flavor. I also added a little shredded Parmesan to the meatloaf mix to help kick up the flavor a little more, and went with a balsamic BBQ glaze to finish kicking things up a notch.

You could change up the veggies if desired; I just used what I had in the house — which fortuitously all worked out to about the same cooking time. (And I know that I’ve been on a green beans kick the last couple of weeks here, but they’re just so good roasted!)

Sheet Pan Balsamic BBQ Turkey Meatloaf Dinner

Ingredients

– for the meatloaf

1/2 Tbsp olive oil
3 Tbsp finely chopped onion
1 tsp minced garlic (about 2 cloves)
1 lb lean ground turkey (90/10 or 93/7)
1/4 cup BBQ sauce
1 Tbsp balsamic vinegar
1/2 cup plain bread crumbs
1/4 cup shredded Parmesan
Black pepper, to taste
Sea salt, to taste
1 egg

– for the glaze

1/4 cup BBQ sauce
1 Tbsp balsamic vinegar
1 tsp Dijon mustard
1/4-1/2 tsp crushed red pepper (optional)

– for the veggies

8 oz fresh green beans, trimmed & halved
1 lb gold potatoes, diced
1 Tbsp olive oil
1/2 tsp seasoned salt
1 tsp Italian seasoning
Black pepper, to taste
2 tsp minced garlic (about 4 cloves)

Directions

Preheat oven to 425 degrees. Line a rimmed baking sheet with foil and spray with cooking spray.

Heat olive oil over medium heat in a small skillet until shimmering. Add onion and garlic and saute until soft, about 3-4 minutes.

Mix the cooked onion & garlic with the ground turkey, BBQ sauce, balsamic vinegar, bread crumbs, Parmesan, black pepper, sea salt, and egg in a large bowl, just until well combined. Form the turkey mixture into four small free-form loaves, and arrange these on one end of the prepared baking sheet.

Ready to cook turkey meatloaf dinner on a sheet pan.

Combine all glaze ingredients and spoon glaze over the top of each mini meatloaf.

On the other end of the baking sheet, toss the green beans and potatoes with olive oil, seasoned salt, Italian seasoning, and minced garlic, then spread them out in a single layer.

Bake your mini turkey meatloaf sheet pan dinner at 425 degrees for 30 minutes, stirring vegetables halfway through (or until the mini meatloaves register 165 degrees internal temperature on a meat thermometer).

Remove pan from oven and let rest five minutes before serving.

Note: Don’t skip the foil, unless you really enjoy scrubbing pans…

I don’t often make meatloaf (blame it on the bad childhood memories…), but do need to remember that all the boys here love it — and, that it doesn’t actually have to resemble the meatloaf of yore! Creating equal mini meatloaves also helps guarantee that no one fights over that last piece, since everyone gets his own individual serving.

This easy all-in-one meal can be on your table in less than an hour, start to finish.

Wow! Family gobbled it up. Only thing I changed was putting the mini loaves nestled between the veggies so the juices helped give them more flavor.

Still making this regularly! Today, in the midst of shelter in place, I didn't have all the ingredients on hand, so I substituted ground beef (produced some extra grease I poured off after cooking; I only had the meatloaf on the pan). I didn't have green beans so I cooked cauliflower in the microwave instead. I didn't have onion, so I used dried minced onions (let it sit in the oil first). Still delicious. Love this meal.
