Midweek Meal Planning 10/15/15

Welcome back to Midweek Meal Planning for the week of 10/15/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start running out of steam, we buck the trend here and go with Wednesdays or Thursdays.

Midweek meal planning

  • Sunday: Leftovers.
  • Monday: Pulled pork enchiladas. I used leftover Slow Cooker Pulled Pork from that cheap pork roast at Jewel last week, sale shredded cheese and sour cream from Pete’s, clearance salsa verde & cheap tortillas from ALDI. These were SO good, you guys — I’ll write up the recipe for you soon!
  • Tuesday: Leftover enchiladas.
  • Wednesday: MashupDad was out, so breakfast for dinner — scrambled eggs, toast, fruit.
  • Thursday: Well, I tried out this Slow Cooker Garlic Butter Chicken for low carb MashupDad… and then he ended up having a business dinner so wasn’t actually home to eat it. The kids loved it; I thought it was OK but a little greasy. I only made half the sauce (added some parsley) and there was still quite a bit! Served with baked potatoes and sauteed spinach.
  • Friday: This is Junior High Guy’s actual birthday, so he gets to choose dinner. He’s been dithering, lol.
  • Saturday: Think MashupDad will be a-grilling!

Mon. - French onion soup - I used some Knorr concentrated stock stuff to make it. And I only had some hamburger buns for the "French" bread - but it turned out good Tues - Skillet Franks from Simple and Delicious magazine July 2007, p. 12 - includes hot dogs; I decreased the amount of noodles to 2 cups Wed. - Waffles, turkey bacon Thurs - Teeny steaks, tater tots, and salad Fri - Super Sloppy Joes from the Taste of Home April 1999 magazine, p. 27 - I've had this in the last month or so and am recycling the menus. Sat. - Pasta Ham Hot Dish from Quick Cooking (has June 28, 2004 on the front), p. 47 - another recycled menu item - turkey ham, spaghetti noodles (in 2 inch pieces), cream style corn, whole kernel corn, onion, cheese, seasoned salt

Sun: Met friends for lunch at Culvers. That's what happens when you let kids choose. Mon: Frozen pizza (migraine day) bought these at Costco from a demo. Better at the demo than at home P'Mos? Tues: Homemade chicken soup (migraine day hoped the soup would help cure that!) Wed: Chicken stir fry with veggies from fridge that needed to be eaten and rice (everyone loved this so need to make more often) I used chili sauce, Hoisin sauce, soy sauce and some rice vinegar as part of the stir fry. Thurs: Oven fried chicken breast (Jewel sale last week), spring mix salad (got the salad for $1 bag at Aldi) Fri: 19yo in from college so requested pasta and homemade sauce, meatballs, sausage, garlic bread, salad Sat: salmon or steak with potatoes and salad, cauliflower steaks from Caputos last week
