Slow Cooker Tuscan Chicken Soup
Slow Cooker Tuscan Chicken Soup is a great way to use up leftover rotisserie chicken and to get two or more dinners for your family out of just one bird.

Ingredients
Half a Costco rotisserie chicken, shredded (about 1.5 lbs cooked shredded chicken)

cloves
garlic, minced
1
medium yellow onion, diced
3
carrots, diced
3
stalks celery, diced
2
cans of Cannellini beans, drained
2
bay leaves
2
tsp
thyme
sea salt, to taste
pepper, to taste
1
32 oz box chicken broth
2
cups
water
4
cups
baby spinach leaves
Juice of 1/2 a small lemon
Shredded Parmesan & fresh parsley to top, optional
Instructions
Add chicken, onions, garlic, celery, carrots, and beans to slow cooker.
Add spices.
Add broth, water, and spinach, then stir.
Cover and cook on low for 8 hours.
Remove bay leaves.
Squeeze in the juice of 1/2 a small lemon and stir.
Serve topped with shredded Parmesan and fresh parsley, if desired.
Notes
I highly recommend adding the lemon juice and Parmesan, as the soup is quite nice but a little more bland without.
