Cut off the ends of the zucchini, then halve it lengthwise and slice into half-moons.
Meanwhile, heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the zucchini in as close to a single layer as possible, and saute over medium-high heat for 5 minutes. Do not stir; just allow it to brown.
Once the zucchini is nicely browned on one side, stir, then top it with the everything bagel seasoning and Parmesan.
Continue sauteeing over medium-high heat for another 4 minutes, stirring occasionally, or until the cheese is browned and zucchini is tender.
Serve immediately.
Notes
With this method, you’ll end up with some browned crunchy bits of Parmesan in the pan along with the zucchini. I like this combo, but if you don’t, just wait to add the Parmesan until you’re done cooking the zucchini, allowing it to just melt on before serving.
