Smoky & spicy lentils are at the flavorful heart of these Vegetarian Chipotle Lentil Tacos -- change things up with meatless tacos, while preserving all the flavor!
Heat the olive oil in a large saute pan over medium heat. Saute onion and bell pepper for four minutes, stirring occasionally.
While these are sauteing, rinse your lentils and chop the chipotle pepper and garlic (if not using minced).
Stir in the garlic, lentils, seasonings, chipotle pepper, and adobo sauce and saute for another two minutes.
Stir in the broth and tomato sauce and bring to a boil. Reduce heat to low, cover, and simmer for 35 minutes or until lentils are tender.
Uncover the pan. Taste the lentils and add a bit more salt, if necessary (I did). Continue to simmer uncovered for another 7 minutes, or until mixture thickens up, stirring occasionally.
Mash the lentil mixture slightly with a potato masher, then serve with your favorite taco fixings.

Notes
These were fairly spicy. You can cut down on that by using half a chipotle pepper and/or less adobo sauce, if desired.
