These Vegetarian White Bean Wraps with Feta & Guacamole are a filling 20 minute Meatless Monday dinner option — so easy on a warm spring or summer evening, without needing to heat up the stove!

Slice your cucumber and tomatoes; dice the onion and mince garlic.
Rinse and drain the beans, then place them in a large bowl. Mash beans slightly with a potato masher, leaving them fairly chunky for texture.
Mix the feta crumbles, diced onion, olive oil, red wine vinegar, minced garlic, and spices into the mashed beans.
Spread 2 oz guacamole down the center of each wrap. Layer on the spinach, tomato slices, cucumber slices, and white bean mixture.
Roll up wraps, and enjoy!
Notes
The ALDI special buy high protein/lower carb wraps I used here don’t roll especially well, hence the toothpick you’ll see holding mine together in the photos. If you’re not specifically looking for high protein, ALDI’s spinach wraps roll much better (and taste much better, although that might be personal preference).
