We happen to think it is the "best ever banana bread," and hope you do, too! Overripe bananas happen to the best of us, so you may as well put them to use with this easy, delicious recipe.
Prepare loaf pan(s) with cooking spray and preheat oven to 350 degrees. (I used 3 mini loaf pans, but you can use a regular loaf pan -- it's up to you!)
Beat eggs and mix in sugar, canola oil, bananas and vanilla.
Mix until thoroughly combined.
Add dry ingredients: flour, salt, baking soda and cinnamon.
Mix well and pour into prepared loaf pans.
Bake at 350 degrees for 45 minutes - an hour & fifteen minutes, depending on which pans you are using. When in doubt, toothpick test!
