Ingredients
~2lbs boneless pork sirloin roast
3
lbs
red potatoes
cut into chunks
2
onions
quartered
olive oil
dried thyme
dried rosemary
salt
pepper
minced garlic
Instructions
Preheat oven to 375.
Place roast in center of rectangular pan and arrange potatoes and onions around it. Drizzle everything with olive oil and toss potatoes to coat.
Add a generous amount of minced garlic, and add dried rosemary, thyme, salt, and pepper to taste, toss potatoes again to coat.
Cook for about one hour 20 minutes, stirring potatoes occasionally.
(I then removed the roast and cooked the potatoes another 20 minutes, since they weren't quite soft enough.)
