1.5-3lbsboneless skinless chicken breast or thighs, depending on how "saucy" you want it
One packet taco seasoning or the equivalent in easy homemade taco seasoning -- http://www.mashupmom.com/easy-homemade-taco-seasoning/
One 16 oz jar salsa of choice
Instructions
Place chicken in Crock-Pot.
Sprinkle taco seasoning over chicken.
Pour salsa over everything.
Cook on low for 5-6 hours, shred, and serve with your favorite taco fixings.
Notes
I like to add black beans to mine as well, but here are two variations:
Variation one: After shredding your chicken, add in a can of drained black beans and/or corn and return everything to the Crock-Pot on low for about 20 minutes to heat through.
Variation two: After shredding your chicken, stir in a generous dollop of sour cream.
