Instructions
To make your marinade/dressing: Add all of the marinade/dressing ingredients to your food processor and blend until just combined.
Use 1/4 cup of marinade to marinate shrimp for about 5 minutes, reserving the rest for salad dressing.
Saute marinated shrimp in olive oil over medium high heat until browned on both sides and flesh is completely pink & opaque, about two minutes per side, being careful not to overcook. Do this in batches to avoid overcrowding your pan.
