Spicy Asparagus Roll-Ups

Welcome to the March 6, 2016 edition of Sunday Scratchups: Your weekly recipe from scratch around grocery store sales and affordable ingredients This week’s Spicy Asparagus Roll-Ups recipe uses the other half of the pack of wonton wrappers I picked up on on sale, plus some of the plentiful fresh asparagus we have going on this week.

The first half of those wonton wrappers went into last week’s Crab Rangoon Cups recipe.

I ate mine as meals, but Spicy Asparagus Roll-Ups would also make for pretty, spring-y, and tidy appetizers. Note: Although this recipe uses just the tops of the asparagus stalks, you don’t have to waste the rest of your asparagus: Roast it up with a little olive oil, sea salt, & crushed red pepper for an easy side dish.

Spicy Asparagus Roll-Ups

Ingredients

4 mozzarella cheese sticks
24 asparagus tops — 1/3-1/2 the length of the spear
Garlic salt, to taste
Hot cherry peppers
24 wonton wrappers
Shredded Parmesan

Directions

Wash asparagus, cut off the top third to half off each spear (depending on the size of the stalk), then sprinkle those tops with garlic salt. Cut your cheese sticks into 24 pieces by slicing them in thirds lengthwise and then slicing those pieces in half.

Place a piece of cheese, a piece of asparagus, and a bit of cherry pepper in the center of each wonton wrapper. Dab the top corner of the wrapper with a bit of water, roll up diagonally, then just press lightly to seal.

Arrange roll-ups on a sprayed cookie sheet. Spray the tops lightly with cooking spray and add a bit of shredded Parmesan to the top of each.

Bake at 350 degrees for 10 minutes, then broil for 3 minutes until nicely browned.

These are spicy!

If you’re not as big a fan of spicy food as I am, you’ll want to cut down on the cherry pepper (or substitute a less hot banana pepper, maybe). Junior High Guy and I thought Spicy Asparagus Roll-Ups were incredibly awesome, though — the spicy pepper balances out the cool mozzarella, while the creamy cheese contrasts nicely with the firmer asparagus and crunchy wrappers.

We use won ton wrappers for homemade "ravioli". Put your favorite filling in middle, please,another wrapper on top and seal with a little water.

These look super yummy - I am a big Asparagus fan. I am totally unfamiliar with wonton wrappers, where are they located in the store? Freezer section? Am I correct in thinking they have gluten? Would be interesting in trying these one day, thanks for the recipe.

They are generally in the refrigerated part of the produce section next to the tofu. The ones I got are not gluten free (they're made with wheat). And thanks! :)
