Tomatoes and basil — for the freezer

I had a semi-productive afternoon today — how was yours? 🙂

I love freezing in the plastic bags like that! Best way to deal with it all. When I just need a little of the item, I just break off a chunk and move on. Soooooo easy! Especially celery, peppers and herbs. I am thinking of getting a dehydrator for the herbs, but, it's so easy to freeze them that I keep putting it off. I really worry about power outages with the freezer full of all our garden stuff.

On Saturday afternoon, I cut up banana peppers and green peppers for the freezer. I also froze my tomatoes for the freezer also. We keep a few of the banana peppers out and put them in Claussen pickle juice. And we've been eating a lot of stuffed peppers! :)

do you freeze your pesto before or after you add the cheese? I have read recipes both ways.

Oh and I should mention -- I'm using Parmesan in mine which is a very dry cheese and it freezes well. If you are changing up the type of cheese it may not.

I freeze it with the cheese in it and it's been fine. Last year I froze it in ice cube trays, popped out the cubes, and froze them in freezer bags. This time I'm trying a batch at a time straight in freezer bags.
