So I’ve been doing this off-and-on Sunday cooking series around grocery matchups and stockpile items — which is now officially dubbed: Sunday Scratchups! AKA: Matchups cooking from scratch. ;) First up today is Snap Crackle Pop chicken legs, which is possibly the easiest chicken to make, ever.

Ingredients

So, first you go to Pete’s Market, and you buy yourself a big pack of chicken legs at $.78/lb. (Mine was a little under 3.5 lbs and cost $2.58.) Family packs of chicken legs are also $.69/lb at Butera this week, $.58/lb at Valli, $1.00/lb at Hy-Vee, and  $.69/lb at Tony’s. Then you gather your massive list of other ingredients: Olive oil and seasoned salt.

Toss your chicken legs in a big bowl with a couple of tablespoons of olive oil and some seasoned salt, to taste. Place in roaster pan.

Bake at 475 for 40 minutes. That’s it! If you aren’t dairy free, you can shake a little Parmesan cheese on at the end if you like to give them an extra kick, but they’re good as is. If this is too many chicken legs for you, you can also shred some of the meat off and use in other recipes — chicken tacos, chicken soup, whatever works for you. Pair with one of the $.90 salads from Dominick’s and you have a cheap, easy, and tasty meal.

Oh yeah — why “snap crackle pop?” It’ll sound like World War III in your oven while these things are cooking — never fear, it’s normal.

LOL — maybe it depends how fatty they are? But yeah, so easy — sometimes you just need easy. :)

I also made this last night. Super easy and very tasty and everyone ate their dinner without complaining. Definitely a winner!
