Welcome back to Midweek Meal Planning for the week of 9/3/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays. Or, occasionally, Thursdays…

The latter part of this week’s meal plan (and its lateness) is inspired by Junior High Guy: He got braces yesterday! So we’re going with softer foods right now for his poor sore teeth.

Midweek meal planning

So here’s our week:

  • Sunday: Leftover salsa chicken.
  • Monday: Chili.
  • Tuesday: The kids talked me into Buona Beef while MashupDad was out of town…
  • Wednesday: Leftover chili.
  • Thursday: Roasted lemon garlic whole chicken (cheap at ALDI with the $3.00 meat coupon) with Yukon Gold potatoes & sauteed spinach. (I’ll cut some off the bone for Junior High Braces Guy.)
  • Friday: Leftover chili and chicken.
  • Saturday: Pork carnitas in the Crock Pot (giant roasts are $1.19/lb at ALDI this week).

I actually pre-planned my week as a good meal planner should ;-) well 2 of the 7 days anyway :-) Hey, it is a start! Sunday: Pork in the crock pot added home made salsa (was yummy). Monday: Stuffed peppers and salad. Tuesday: Didn't plan, supposed to have a Cross Country meet 4MyJrHighGuy eat out after but because of lockdown and GI Joe death, cancelled. Pasta and local farm made sauce. Wednesday: Chuch roast in the crock pot, carrots, potatoes. (However... I forgot to put in the crock pot and used this recipe which is now one of our favorites, I used a 2lb. grass fed chuck roast, clearance at Target, cream of chicken soup instead of mushroom, everything else the same) http://www.cooks.com/recipe/r294u522/oven-pot-roast.html Thursday: CC Meet at out after. Friday: Leftovers.

Mon. - Leftover chili, tortilla chips, cheese Tues. - From Simple and Delicious mag April 2009, p 15, Parmesan Cornflake Chicken (crushed cornflakes, parmesan, bread crumbs, etc.), baked potatoes, salad Wed. - From Simple and Delicious mag, July 2007, p 14, Mini Shepherd Pies, salad Thurs. - From Taste of Home mag Spring 2009, p 12, Apricot-Coconut French Toast, turkey bacon on the side - this was the first time I tried this and it was good. I didn't use the 7 eggs like the recipe said, but just 3 eggs and it worked out perfectly. This is a make ahead and let it sit overnight recipe. Fri. - Was going to have teeny steaks, baked potatoes, salad - but will eat out Sat. - Hillshire beef brats, baked beans, hot dog buns, salad Sun. - Drop Biscuits and Gravy, using Jennie-O breakfast sausage in that roll package; this recipe is from a past Quick Cooking(?) recipe, but I don't remember, and I have to look for the recipe. This recipe is great because the biscuits take about 20 minutes and the gravy part (with the meat) takes just about the same. One can even shorten it up and use canned biscuits. So it is quick and easy, is an excellent recipe - I double it, thinking that I'll have leftovers.

We are mostly eating out of the freezer and garden this week: BLT's Chips with Homemade Salsa Chicken Burrito Bowls French Toast and sausage (using up some extra bread I had frozen)

I haven't been very good about dinner this week. Sunday: Ordered pizza Mon: Nathan Hot dogs, Doritos both on sale at Jewel this week, Eclair cake with graham crackers, pudding, frosting (all in pantry) Tues: burrito bowls with some pre-made meat in the freezer- chicken or pork? cheap avocados Aldi, cherry tomatoes, etc. Wed: pasta with homemade cherry tomato sauce roasted then blended and poured over pasta, green salad. Pretty good. Thurs: Greek chicken thighs (Caputos $1.49 last week) on the grill, salad, roasted veggies on grill Fri: left over chicken, salad, baked potatoes corn from Aldi/Jewel Sat: don't know- looks like I have a ton of chicken in the freezer or a beef roast in the crockpot- Asian tacos?
