Midweek meal planning 8/5/15

Welcome back to Midweek Meal Planning for the week of 8/5/15! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip midweek, and since Wednesday hump day is when many of us start running out of steam, we buck the trend here and go with Wednesdays. Let’s get back to business! I just had family in town so meals last week were — well, let’s just say there was a lot more eating out than usual, and a lot less planning.

Apparently the answer to what we are eating here this week is: Tomatoes. Tomatoes. And more tomatoes. This is just the tip of the tomato iceberg — they are going nuts this year, how about yours?

  • Sunday: Dinner with Nana.
  • Monday: Domino’s. Yes. Ugh. Domino’s — It was just me and Junior High Guy home for dinner, and that was his pick.
  • Tuesday: Chili. Kind of like this Easy Smoky Chili recipe, but without the pesky measuring and made with a fresh batch of Fire Roasted Tomatoes using some of these Romas from the garden. Sourdough toast, fruit.
  • Wednesday: Caprese “Nachos.” Recipe coming Sunday, but that used up a bunch of the cherry tomatoes… 😉
  • Thursday: Leftover chili.
  • Friday: I think I’m going to try this Avocado, Mozzarella, and Bruschetta Chicken, but will scratch up some kind of bruschetta with the garden tomatoes instead of using the store bought container.
  • Saturday: Grilling up the Park’s Finest hot dogs from Target today (net $.69) and some MorningStar chipotle burgers (the sample lady sold me on these at Costco), probably having potato packets and cauliflower packets with those. Will need to pick up buns at some point.

My tomatoes look great but all are still green. I think I planted a little late again but I have a handful of big ones that are yellow so soon and very soon! Have all sorts of varieties, thanks for sharing the tomato recipes, I will take the skins off and freeze my extra.

Monday: Super delicious turkey meatloaf and some Orida (sp?) frozen potatoes that you then mash, bought on clearance at Target and first time tried them they were super yummy.

That is seriously all I can think of in the moment :-) tonight we are eating out since the boys are paintballing at 4pm and too far to get home to eat after. All sorts of school stuff going on next week so I am going to start planning some meal ideas and a way to be more organized! Still need something on my freezers for tracking what is in them but have been eating out of them and not shopping for a while so they are getting a bit cleared out! :-)

I wish mine were going crazy!!! Its my first year trying to grow them. We did cherry tomatoes. Any guidance would help! ? congrats to you tho!!! Those look yummy!

Ours do great since we moved them to a south facing area with lots of sun all day. Cherry and Roma do well for us -- the bigger ones never have.

Sunday: Went to a party not cooking Monday: Grilled chicken thighs from J. Caputo $1.29, Asian noodle slaw and fruit from Aldi Tues: Leftovers from Monday Wed: Quiche with bacon in freezer, spinach and cheese. Pie shells in freezer. fruit Thurs: BBQ pork chops, potatoes on the grill, salad Fri: Ham from an Aldi sale awhile back, slaw since I have fixings left, Hawaiian rolls from Aldi Sat: leftovers from ham and slaw Trying to cook from my freezer next week.

Sun. - Naan pizza (you can get that Naan bread (a two-pack) at Aldi's), made with some Perdue shortcut chicken for the meat (one can add basically any kind - turkey pepperoni works well, too), spiced up tomato sauce (an 8 oz. can was enough for four of the Naan bread), cut up raw onion, cheese, and salad - first time I tried the Naan bread and it was great Mon. - More teeny steaks from the freezer, eggs and hash browns Tues. - Cowboy biscuits, had some jumbo canned biscuits (two, with 8 biscuits in each), one pound browned hamburger (from a "reduced for quick sale" that I had in the freezer), sauteed onion, added 1 cup ketchup, 1/4 cup BBQ sauce (bottled), tsp. mustard, 1/2 Tbsp. worcestershire, cheese on top. Push biscuits into muffin tins and form to the cup, add hamburger stuff, cheese (I had block cheese, so I just cut it), bake 375-400 degrees about 20 minutes, add salad on the side. I still had leftover meat for this because my muffin tins were the regular size so I can use that meat for something else. Wed. - Aldi's had had on markdown some of the turkey andouille sausage (similar to a brat, made spicier), on hot dog buns, along with baked beans, and salad Thurs - Whole chicken, potatoes (I don't know yet what kind). Will try to find a recipe for the chicken where it is cooked at a higher temperature, but less time Fri - Cube steaks (I keep finding those on special!) - "chicken fried" again - it is so good. I don't get tired of it. I will add potatoes (for the gravy, of course) Sat. - I will make a turkey ham in the crockpot (but it won't be more than 3 hours because the turkey ham kinda breaks down after too long and gets mushy inside), rice, and green beans (?) Sun. - I don't have anything planned at this point - will check the freezer for something! Maybe we'll have tacos - have some taco shells in the cabinet. I still have a few days to think of something

I love naan pizza! Haven't tried the ALDI naan, glad to know it's good though.

I made peanut chicken with noodles since I had a good amount of peanut butter from the jewel sale!

Ooh, good thinking. Do you have a good recipe for that? I've never tried making it at home.
